Ingredientes

  • 12 ounce dry soba noodles
  •     (Japanese buckwheat noodles)
  • 1/3 c. rice vinegar (not seasoned)
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. soy sauce
  • 1 1/4 tsp sugar
  • 3/4 tsp salt
  • 1/2 c. minced fresh mint
  • 1 1/2 c. thinly-sliced scallions - (1 1/2 bunches)

Direcciones

  1. Cook noodles in a large pot of boiling water till just tender, about 5 min, then drain in a colander. Rinse under cool water to stop cooking, then drain well.
  2. While noodles are cooking, stir together vinegar, oil, soy sauce, sugar, and salt till sugar is dissolved. Toss noodles with dressing, mint, and scallions.
  3. This recipe yields 6 servings.
