Receta Mint And Scallion Soba Noodles

Ingredientes
- 12 ounce dry soba noodles
- Â Â (Japanese buckwheat noodles)
- 1/3 c. rice vinegar (not seasoned)
- 1 Tbsp. vegetable oil
- 1 Tbsp. soy sauce
- 1Â 1/4 tsp sugar
- 3/4 tsp salt
- 1/2 c. minced fresh mint
- 1Â 1/2 c. thinly-sliced scallions - (1 1/2 bunches)
Direcciones
- Cook noodles in a large pot of boiling water till just tender, about 5 min, then drain in a colander. Rinse under cool water to stop cooking, then drain well.
- While noodles are cooking, stir together vinegar, oil, soy sauce, sugar, and salt till sugar is dissolved. Toss noodles with dressing, mint, and scallions.
- This recipe yields 6 servings.
