..How%20is%20the%20Monday%20going%20on..We%20had%20a%20rainy%20Saturday%20,all%20drenched%20n%20beautiful..the%20kinda%20day%20when%20all%20you%20wanna%20do%20is%20,%20cuddle%20in%20the%20couch%20with%20a%20nice%20throw,your%20loving%20one..n%20mmmm..mebe%20an%20occasional%20cuppa%20coffee..:)%20%20%20%20%20See%20my%20window%20pane%20in%20the%20morning,showing%20me%20a%20beautiful%20pitter-patter%20day,n%20wet%20meadows%20n%20when%20I%20opened%20it,the%20cold%20breeze%20gave%20me%20several%20goosebumps..:)..We%20had%20hot-hot%20Masala%20dosa%E2%80%99s%20n%20coffee%20n%20just%20snuggled%20the%20whole%20day..:)..Sunday%20was%20a%20bright%20n%20busy%20day%20with%20Onam%20celebrations%20(Kerala%20association)%20going%20on%20n%20I%20was%20dead%20tired%20after%20all%20the%20run-around..So%20that,%20pretty%20much%20made%20my%20weekend..Though%20we%20are%20on%20summer-fall%20border%20line,the%20evenings%20n%20nights%20are%20way%20too%20chilling%20n%20that%20make%20us%20crave%20for%20spicy%20snacks%20n%20gravies%20that%E2%80%99ll%20bring%20in%20the%20heat%20to%20your%20tongue%20n%20body..(anyways%20I%20crave%20for%20that%20only,all%20the%20time..:D)%20;)%20%20%20%20%20%20%20Before%20going%20on%20to%20the%20post,would%20you%20just%20look%20at%20the%20loot%20I%20had%20from%20Asianfoodgrocer%20store..Tons%20of%20thanks%20to%20them%20n%20FoodBuzz%20for%20giving%20us%20publishers%20such%20a%20nice%20offer..I%20got%20hold%20of%20some%20cutleries%20n%20some%20original%20Panko%20n%20Risotto%20with%20Arborio%20rice%20n%20Tofu%20n%20all%20that..:)%20%20%20%20%20Ok,coming%20to%20the%20recipe..remember%20once%20I%20mentioned%20about%20my%20Kebab%20hunt??%20I%20made%20Sheekh%20Kebab%20that%20day%20n%20loved%20it%20,n%20had%20written%20quite%20a%20lot%20about%20the%20history%20n%20all%20that..Before%20that%20I%20had%20seen%20Maria%E2%80%99s%20recipe%20for%20Malai%20Kebab,n%20had%20mentally%20noted%20it%20down%20to%20try%20it%20and%20did%20that%20a%20week%20back%20with%20some%20modifications.I%20really%20love%20Mint,the%20herb%20n%20like%20its%20combo%20with%20meat..especially%20chicken.So%20I%20decided%20to%20use%20it%20in%20the%20marinade,also%20increased%20the%20spice%20level%20a%20notch%20up.We%20both%20really%20loved%20it..:)..Malai%20aka%20Fresh%20cream%20n%20spice%20n%20aromatic%20whole%20spice%20powder%20n%20fresh%20mint%20are%20the%20stars%20of%20this%20preparation%20n%20really%20gives%20a%20mouth%20watering%20Kebab..%20A%20quick%20question,How%20do%20you%20guys%20like%20me%20to%20give%20out%20the%20ingredient%20list?%20In%20all%20my%20previous%20posts,I%20am%20doing%20it%20,by%20giving%20in%20paragraphs%20just%20like%20the%20way%20I%20tell%20it%20out%20to%20you%20while%20I%20cook.But%20some%20of%20my%20readers%20told,that%20they%20would%20like%20to%20see%20it%20in%20a%20separate%20section,as%20that%20makes%20them%20easier%20to%20note%20down..Please%20leave%20a%20word%20here%20foodies..!:)..As%20of%20now,I%E2%80%99ll%20do%20it%20separate,like%20they%20wanted%20me%20to..:)%20%20%20Ingredients%201%20lb%20chicken%20pieces%20(Tender%20breast%20pieces%20would%20be%20the%20best)%201/4%20C%20Fresh%20cream%203%20big%20green%20chillies,1/4%20C%20fresh%20Mint%20leaves,2%20Tbsp%20minced%20cilantro(optional),1.5%20tsp%20minced%20garlic,2%20tsp%20julienned%20ginger,1%20Tbsp%20roasted%20whole%20Pepper%20corns,3%20cardamoms%20%E2%80%93%20ground%20into%20a%20paste%201/2%20tsp%20Cumin%20powder(roasted)%201/2%20tsp%20Garam%20Masala%201/4%20tsp%20Amchur%20powder%20(if%20you%20are%20short%20of%20it,add%202%20tsp%20lime%20juice)%201%20tsp%20Kasuri%20Methi%20A%20squeeze%20of%20half%20of%20a%20big%20lemon(to%20give%20that%20extra%20tanginess)%20Salt%20Oil%20Method%20Marinate%20the%20chicken%20nicely,with%20all%20the%20ingredients%20mixed%20together%20in%20a%20bowl.%20Cover%20with%20a%20cling%20film%20and%20refrigerate%20it%20over%20night%20or%20a%20min%20of%205%20hours.%20Take%20out%20n%20skewer%20these%20soft%20pieces%20carefully%20into%20bamboo%20skewers(soak%20the%20skewers%20in%20water%20for%20a%20while%20before%20grilling)%20n%20grill%20it%20.%20If%20using%20oven,place%20the%20skewers%20in%20an%20oiled%20baking%20sheer%20n%20roast%20at%20350%20F%20for%2020%20minutes.Turn%20once%20after%2015%20minutes%20to%20grill%20the%20other%20side%20as%20well.%20%20%20Verdict:%20Moist%20n%20spicy%20n%20tender%20yumm..The%20cream%20is%20what%20made%20the%20chicken%20pieces%20stay%20moist%20n%20tender%20.So%20no%20extra%20oil%20basting%20was%20necessary.Do%20check%20once%20in%20a%20while,as%20over%20baking%20may%20leave%20it%20too%20dry%20n%20hard.Well-cooked%20,moist%20n%20fall-apart%20tenderness%20is%20what%20makes%20this%20dish%20special.Mint%20n%20all%20those%20aromatic%20spices,which%20are%20the%20trademarks%20of%20Indian%20cuisine,%20give%20%20out%20this%20heavenly%20aroma%20once%20baked%20n%20I%20had%20several%20pieces%20as%20such%20in%20one%20go..Didn't%20even%20need%20a%20dip..Kutts%20had%20it%20with%20some%20hot%20Sriracha%20sauce,as%20if%20the%
