Ingredientes

  • 16 sm Red potatoes, halved
  • 1 x 1 lb. pkg. Green Giant Select LeSueur Frzn Baby Sweet Peas
  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Butter
  • 1 sm Leek, halved, thinly sliced
  • 1 Tbsp. Minced fresh mint or possibly 1 teaspoon dry mint leaves
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Direcciones

  1. Place potatoes in large saucepan; add in just sufficient lightly salted water to cover. Bring to a boil. Reduce heat; cover and simmer 15 min. Add in peas to potatoes; cook 3 to 7 min or possibly till potatoes and peas are tender. Drain; toss with oil.
  2. Meanwhile, in small saucepan, heat butter over medium heat. Add in leek; cook and stir 5 to 7 min or possibly till tender. Add in mint, salt and pepper; mix well.
  3. Place potato mix in serving bowl. Pour leek mix over vegetables; stir gently to coat.
  4. Yield: 8 (3/4 c.) servings.
