Ingredientes

  • 1/2 c. extra-virgin extra virgin olive oil
  • 2 Tbsp. minced fresh basil plus
  • 1/4 c. minced fresh basil
  • 7 ounce soft fresh goat cheese log cut into 6 rounds
  • 8 ounce mixed baby greens
  • 2 1/2 Tbsp. rice vinegar
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 3 lrg ripe plums pitted, each
  •     cut into 16 wedges

Direcciones

  1. Whisk oil and 2 Tbsp. basil in shallow bowl. Season with salt and pepper. Add in cheese; spoon basil oil over. Cover; let stand at room temperature 2 hrs.
  2. Remove cheese from basil oil. Reserve oil. Toss greens and 1/4 c. basil in large bowl. Add in reserved basil oil and vinegar; toss. Season with salt and pepper. Divide among 6 plates. Top each salad with 1 cheese round and plum wedges.
  3. This recipe yields 6 servings.
  4. Comments: Marinate the cheese for a couple of hrs, then assemble the salad just before serving.
