Ingredientes

  • 1 1/2 tsp Dijon-style mustard
  • 1 x shallot chopped
  • 4 tsp tarragon white-wine vinegar
  • 2 Tbsp. chopped fresh tarragon leaves or possibly 1 crumbled tsp. dry
  • 1/3 c. extra-virgin extra virgin olive oil
  • 8 c. torn mixed baby greens such as red or possibly green oak-leaf and Lollo
  •     rosso lettuces (available at specialty produce markets and some supermarkets), rinsed well and spun dry

Direcciones

  1. In a large bowl whisk together the mustard, the shallot, the vinegar, the tarragon, and salt and pepper to taste, add in the oil in a stream, whisking, and whisk the dressing till it is emulsified. Add in the greens and toss the salad well.
  2. Serves 8.
