%20golden%20and%20red%20beets,%20crisp,%20firm%20mushrooms,%20gorgeous%20salad%20leaves%20plus%20they%20stock%20my%20favourite%20eggs.%20I%20am%20so%20thrilled%20to%20have%20found%20SCF%20and%20plan%20to%20order%20fortnightly.%3C/p%3E%3Cp%3EHow%20lovely%20that%20these%20delicious%20salad%20leaves%20were%20grown%20happily,%20without%20chemicals!%20We%20enjoyed%20them%20for%20lunch%20at%20the%20weekend.%3C/p%3E%3Cp%3EAnd%20these%20are%20my%20favourite%20eggs%20%E2%80%93%20they%20taste%20like%20the%20eggs%20of%20my%20childhood%20and%20I%20wrote%20about%20them%20in%20my%20first%20ever%20recipe%20post%20%20%20%20%20http://selmastable.wordpress.com/2013/08/07/courgette-feta-and-thyme-bake/%20%E2%80%8EAlas,%20the%20farmers%20market%20from%20where%20I%20used%20to%20get%20the%20eggs,%20%20is%20no-more%20so%20I%20am%20really%20pleased%20to%20have%20found%20them%20at%20SCF.%20We%20had%20the%20eggs%20for%20brunch%20on%20Sunday,%20poached%20with%20some%20steamed%20purple%20sprouting%20broccoli%20and%20a%20little%20hollandaise%20sauce.%3C/p%3E%3Cp%3EThe%20beets%20%E2%80%93%20%20beautiful%20and%20glowing%20jewel-like%20once%20scrubbed.%20%20If%20you%20follow%20Selma%E2%80%99s%20Table%20on%20Facebook,%20you%20will%20have%20seen%20me%20enthusiastically%20posting%20some%20of%20these%20photos.%3C/p%3E%3Cp%3EBeetroot%20can%20be%20boiled,%20steamed%20and%20even%20thinly%20sliced%20and%20eaten%20raw.%20They%20are%20also%20wonderful%20juiced%20raw,%20with%20a%20couple%20of%20apples%20and%20%20carrots,%20a%20nugget%20of%20ginger%20and%20half%20a%20lemon.%20I%20find%20that%20roasting%20them%20intensifies%20the%20natural%20sweetness%20and%20transforms%20them%20to%20soft%20silky%20slivers%20that%20are%20wonderful%20in%20salads.%20%20Once%20cooked,%20they%20keep%20for%20days%20in%20the%20fridge%20(so%20you%20may%20as%20well%20prepare%20quite%20a%20few)%20%20which%20makes%20lunch%20boxes%20and%20salads%20so%20much%20more%20exciting.%20I%20like%20to%20start%20them%20off%20in%20a%20sealed%20foil%20packet%20and%20then,%20towards%20the%20end%20of%20the%20cooking%20time,%20open%20them%20out%20to%20the%20direct%20heat%20of%20the%20oven%20to%20caramelise.%3C/p%3E%3Cp%3EIf%20your%20beets%20are%20really%20fresh,%20they%20should%20have%20quite%20a%20thin%20skin.%20The%20red%20beets%20from%20the%20SCF%20were%20so%20fresh,%20that%20we%20did%20not%20need%20to%20peel%20the%20skins%20at%20all%20once%20they%20were%20cooked.%3C/p%3E%3Cp%3EAnd%20just%20a%20reminder%20that%20red%20beets%20will%20stain%20everything%20porous%E2%80%A6%3C/p%3E%3Cp%3EWaterlogue%E2%80%99d%3C/p%3E%3Cp%3EMy%20recipe%20for%20Mixed%20Roasted%20Beets%20with%20Goat%E2%80%99s%20Cheese,%20Honey%20and%20Mint%20is%20a%20great%20balance%20of%20flavours;%20warm%20beets%20with%20melting%20cubes%20of%20goats%20cheese%20and%20a%20sweet%20and%20sour%20dressing%20topped%20with%20mint.%3C/p%3E%3Cp%3EMixed%20Beets%20with%20Goat%E2%80%99s%20Cheese%20and%20Mint%3C/p%3E%3Cp%3E4%20%E2%80%93%206%20side%20servings%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3EINSTRUCTIONS%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20200C/400F%3C/p%3E%3Cp%3EScrub%20the%20beets%20well%20%E2%80%93%20I%20use%20one%20of%20those%20green%20plastic%20scouring%20pads%20to%20get%20all%20the%20mud%20off.%3C/p%3E%3Cp%3EPeel%20the%20golden%20beets%20but%20leave%20the%20skins%20on%20the%20red%20ones%20to%20avoid%20staining%20everything%3C/p%3E%3Cp%3EHalve%20the%20beets%20then%20slice%20each%20half%20into%203%20or%204%20wedges%20depending%20on%20how%20large%20they%20are.%20Keep%20the%20two%20beets%20separate%20to%20preserve%20the%20colour%20of%20the%20golden%20ones.%3C/p%3E%3Cp%3ETear%20off%202%20sections%20of%20foil,%20large%20enough%20to%20wrap%20each%20pile%20of%20the%20beet%20wedges%20in.%3C/p%3E%3Cp%3EPop%20the%20wedges%20on%20the%20foil,%20drizzle%20over%20a%20little%20honey%20and%20olive%20oil,%20scatter%20over%20a%20little%20thyme%20and%20sea%20salt,%20then%20wrap%20the%20foil%20to%20make%20a%20couple%20of%20packets.%3C/p%3E%3Cp%3ERoast%20for%2030%20%E2%80%93%2040%20minutes;%20depending%20on%20their%20size,%20they%20may%20need%20longer.%3C/p%3E%3Cp%3EOnce%20soft,%20open%20out%20the%20foil,%20spoon%20over%20the%20juices%20to%20baste%20the%20wedges%20and%20pop%20back%20into%20the%20oven%20to%20caramelise%20for%20about%2010%20minutes.%3C/p%3E%3Cp%3EIf%20the%20skins%20are%20tough%20on%20the%20red%20beets,%20remove%20them%20%E2%80%93%20they%20should%20slip%20off%20easily%20once%20they%20are%20cooked.%3C/p%3E%3Cp%3EArrange%20on%20a%20serving%20plate,%20top%20with%20the%20goat%E2%80%99s%20cheese,%20squeeze%20over%20a%20little%20lemon%20juice,%20drizzle%20with%20honey%20and%20EVOO%20then%20strew%20with%20chopped%20mint%20leaves.%3C/p%3E%3Cp%3E51.508515%3C/p%3E%3Cp%3E-0.125487%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
