Ingredientes

  • 500 gm White Fish Steaks or possibly Fillets, (e.g. haddock, cod, halibut)
  • 250 gm Fresh Cleaned Scallops
  • 250 gm Cooked Shelled Prawns
  • 175 gm Crab Meat
  • 4 x Spring Onions, (minced)
  • 25 gm Butter
  •     Lemon Juice
  • 50 gm Butter
  • 3 Tbsp. Plain Flour
  • 250 ml Fish Stock or possibly Lowfat milk
  • 125 ml Cream
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp. Minced Parsley
  • 1/2 Tbsp. Minced Dill
  • 1 Tbsp. Minced Capers, (liquid removed and rinsed)
  • 900 gm Potatoes
  • 50 gm Melted Butter
  • 125 gm Strong Cheddar, (grated)

Direcciones

  1. Place the white fish on a plate and sprinkle with lemon juice, salt and fresh grnd black pepper.
  2. Cover and steam till cooked through (exact timing will depend on the thickness of the fish).
  3. Remove any skin and bones from the fish and break the flesh into large pcs. Put these into a bowl with any juices from the fish.
  4. Add in the scallops, prawns and crab meat to the bowl. Lightly saute/fry the spring onions in the butter and add in to the fish. Keep cold till the sauce is made.
  5. Sauce
  6. Heat the butter in a heavy pan.
  7. Stir in the flour and cook gently for 2 min.
  8. Pour in the fish stock a little at a time, followed by the cream, stirring constantly till the sauce is thickened and bubbling.
  9. Add in the lemon juice, parsley, dill and capers, and then season to taste.
  10. Mix the sauce gently into the seafood.
  11. Topping
  12. Cook the potatoes with their skins on.
  13. When cold, peel and slice them.
  14. Pour the fish mix into a well buttered ovenproof dish.
  15. Arrange slices of potato all over the fish and pour over the melted butter.
  16. Add in several twists of fresh grnd black pepper and a little salt.
  17. Finally, sprinkle on the grated cheese and bake in a preheated oven set at 200 c / 400 f / Gas Mark 6 for 35 - 40 min or possibly till the cheese is golden brown and bubbling.
