Moist Poached Salmon

Ingredientes

  • 2 x Salmon steaks or possibly fillets - (8 ounce ea)
  •     Salt to taste
  • 2 c. Water - (to 3 c.)
  •     (or possibly a combination of water and dry white wine)
  • 1/2 tsp Whole coriander seeds
  •     Bay leaf
  • 1 x recipe Cucumber Sauce see * Note

Direcciones

  1. Arrange salmon in a single layer in a skillet which is 2 inches deep. Season with salt. Add in sufficient water and wine to completely cover the salmon; add in coriander seeds and bay leaf. Slowly bring liquid barely to a simmer. Reduce heat to low, cover the skillet and simmer for 3 to 4 min or possibly till the salmon looks opaque.
  2. Turn heat off and let stand covered for 10 min. Serve with Cucumber Sauce.
  3. This recipe yields 2 servings.
