Receta Moist Poached Salmon

Ingredientes
- 2 x Salmon steaks or possibly fillets - (8 ounce ea)
- Â Â Salt to taste
- 2 c. Water - (to 3 c.)
- Â Â (or possibly a combination of water and dry white wine)
- 1/2 tsp Whole coriander seeds
- Â Â Bay leaf
- 1 x recipe Cucumber Sauce see * Note
Direcciones
- Arrange salmon in a single layer in a skillet which is 2 inches deep. Season with salt. Add in sufficient water and wine to completely cover the salmon; add in coriander seeds and bay leaf. Slowly bring liquid barely to a simmer. Reduce heat to low, cover the skillet and simmer for 3 to 4 min or possibly till the salmon looks opaque.
- Turn heat off and let stand covered for 10 min. Serve with Cucumber Sauce.
- This recipe yields 2 servings.
