Receta Mom's Prize Lemon Meringue Pie

- Blend sugar, cornstarch, flour and salt in medium saucepan. Add in lemon juice, rind, cool water, beaten egg yolks, blending till very smooth. Add in boiling water.
- Bring to a boil over medium heat, stirring constantly, then boil 2-3 min. Remove from heat. Stir filling occasionally till hot. When cold, add in to pie shell.
- MERINGUE: Beat 3 egg whites, cream of tartar. Add in sugar gradually. Apply to top pie filling. Bake at 350 degrees for 10-13 min.
