%3C/p%3E%3Cp%3EI%20pre-'baked'%20my%20potatoes%20in%20the%20microwave%20for%20about%208%20minutes%20until%20they%20were%20scoopable,%20but%20not%20done.%3C/p%3E%3Cp%3EI%20cut%20them%20in%20half%20and%20scooped%20them%20out%20and%20turned%20them%20upside%20down%20on%20a%20baking%20sheet%20and%20put%20oil%20on%20the%20skins%20and%20cooked%20them%20off%20for%20about%20another%2015%20minutes%20while%20I%20made%20the%20filling-%3C/p%3E%3Cp%3EI%20sauteed%20the%20onion%20and%20mushroom%20in%20the%20butter%20until%20they%20were%20ALMOST%20to%20the%20carmelized%20point...I%20wanted%20them%20all%20soft%20and%20sweet..and%20they%20were.%20When%20they%20were%20as%20done%20as%20I%20wanted%20them%20to%20be%20that%20is%20when%20I%20tossed%20in%20the%20W%20sauce.%20Even%20though%20we%20weren't%20having%20steak%20the%20mushrooms,%20onions,%20and%20bleu%20cheese%20was%20too%20steaky%20for%20me%20to%20NOT%20throw%20in%20the%20W.%3C/p%3E%3Cp%3EUm..where%20was%20I?%20Ok..let%20the%20veggies%20cool..but%20just%20a%20little..and%20toss%20them%20into%20your%20potato%20that%20you%20scooped%20out%20earlier.%20Also%20put%20in%20your%20cream%20cheese...now%20if%20you%20wanted%20to%20stop%20here.%20You%20could.%20You%20really%20could.%20I%20mean%20you've%20got%20potatoes,%20veggies,%20and%20cheese.%20So%20go%20ahead%20and%20bail%20now,%20fill%20up%20your%20potato%20skins%20and%20enjoy.%20However...have%20I%20ever%20told%20you%20I%20was%20born%20in%20WI?%20Well%20I%20was...but%20we%20moved%20to%20TX%20when%20I%20was%203%20weeks%20old%20and%20I've%20never%20been%20back%20to%20WI....however%20it%20didn't%20take%20long%20for%20the%20cheese%20to%20sink%20in...I%20think%20I%20was%20born%20with%20it.%20I%20LOVE%20cheese...so%20I%20went%20ahead%20and%20tossed%20in%20the%20bleu%20and%20the%20pepperjack%20(I%20LOVE%20pepperjack!).%20So%20Suzy's%20Steakhouse%20Twice%20Baked%20Potatoes%20could%20very%20easily%20be%20Suzy's%20Steakhouse%203-Cheesy%20Twice%20Baked%20Potatoes...%3C/p%3E%3Cp%3EThe%20oil%20on%20the%20skins%20should%20have%20made%20them%20nice%20and%20crispy%20so%20take%20the%20filling%20and%20fill%20away...oh%20and%20top%20with%20just%20a%20sprinkle%20of%20pepperjack%20for%20good%20measure..and%20put%20back%20in%20the%20oven%20for%20about%20eh..15%20minutes.%3C/p%3E%3Cp%3EYou%20see..the%20above%20rambling%20paragraph%20is%20why%20I%20prefer%20to%20just%20copy%20and%20paste%20stuff.%20I%20doubt%20I'll%20ever%20accomplish%20a%20real%20cookbook%20b/c%20my%20writing%20style%20is%20more%20steam%20of%20what's%20in%20my%20head...but%20so%20is%20my%20cooking%20style.%20:)%3C/p%3E%3Cp%3EI%20hope%20you%20enjoy%20this%20meal%20as%20much%20as%20we%20did!%20The%20tomatoes%20and%20the%20green%20onions%20REALLY%20make%20the%20chicken%20as%20much%20as%20those%20hidden%20little%20bits%20of%20bleu%20cheese%20add%20SO%20much%20to%20the%20potatoes.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
