%20and%20more%20liquid%20(1/2%20cup%20instead%20of%201/4)%20cup%20and%20more%20sugar%20(1/2%20cup%20instead%20of%201/4%20cup%20and%20a%20tablespoon)%3C/p%3E%3Cp%3EWhisking%20the%20egg%20yolks%20and%20sugar%20off%20the%20heat,%20then%20adding%20the%20liquid%20and%20a%20pinch%20of%20salt%20before%20putting%20the%20bowl%20on%20the%20bain-marie%3C/p%3E%3Cp%3EThe%20first%20change%20gave%20me%20more%20material%20to%20work%20with,%20while%20the%20latter%20meant%20that%20I%20was%20no%20longer%20cooking%20the%20eggs%20and%20sugar%20for%20too%20long%20prior%20to%20adding%20in%20the%20alcohol.%20The%20main%20point%20of%20the%20cooking%20is%20to%20both%20gently%20cook%20the%20eggs%20and%20create%20the%20foam%20but%20also%20let%20some%20of%20the%20alcohol%20cook%20out,%20and%20before%20when%20I%20was%20cooking%20just%20the%20eggs%20and%20sugar%20by%20the%20time%20I%20got%20to%20the%20appropriately%20foamy%20point%20the%20whole%20thing%20had%20cooked%20down%20too%20much%20and%20became%20too%20thick%20to%20dispense%20it%20properly.%20The%20foam%20I%20got%20here%20was%20both%20voluminous%20but%20not%20stiff,%20and%20when%20I%20poured%20it%20into%20the%20canister%20I%20had%20just%20enough%20to%20fill%20it%20to%20the%20max%20amount.%20The%20real%20test,%20though,%20came%20when%20I%20went%20to%20serve%20it%E2%80%93not%20only%20did%20I%20have%20enough%20to%20dispense%20for%20each%20of%20us,%20but%20I%20had%20plenty%20more%20to%20then%20give%20us%20each%20a%20second%20helping.%20(Granted,%20I%20use%20small%20glasses%20to%20serve%20this,%20but%20still%E2%80%93this%20is%20a%20triumph.)%20There%E2%80%99s%20still%20a%20good%20amount%20left%20in%20the%20canister%20itself%20that%20appears%20to%20be%20usable%20so%20needless%20to%20say%20I%E2%80%99m%20pretty%20excited%20how%20well%20this%20all%20worked%20out.%3C/p%3E%3Cp%3ESabayon%20(or%20zabaglione)%20is%20traditionally%20made%20with%20Marsala,%20but%20we%20don%E2%80%99t%20usually%20keep%20Marsala%20in%20the%20house%20so%20I%20typically%20use%20vermouth%20instead,%20and%20now%20that%20I%20have%20Casa%20Mariol%E2%80%99s%20vermut%20negre%20readily%20on%20hand,%20it%20was%20the%20natural%20pick%20to%20use%20here.%20It%20packs%20just%20the%20right%20flavor%E2%80%93spicy%20and%20sweet%E2%80%93and%20pairs%20deliciously%20with%20berries%20that%20serve%20as%20the%20traditional%20accompaniment.%20The%20pinch%20of%20salt%20Alton%20Brown%20recommends%20elevates%20everything%20to%20just%20the%20right%20amount,%20and%20it%20really%20is%20amazing%20how%20well%20the%20foam%20keeps%20its%20texture%20and%20consistency%20in%20the%20canister%20since%20I%20made%20it%20a%20couple%20of%20hours%20before%20dinner.%20Michael%20deemed%20it%20possibly%20the%20best%20dessert%20to%20come%20out%20of%20the%20iSi%20to%20date%20(and%20he%20loves%20him%20some%20yogurt%20foam),%20and%20now%20that%20I%20finally%20figured%20out%20how%20to%20bring%20it%20together%20properly%20I%E2%80%99m%20going%20to%20start%20making%20it%20more%20often.%3C/p%3E%3Cp%3ESabayon%20with%20Mixed%20Berries%20(iSi%20Whip/Cream%20Charger%20Edition)%3C/p%3E%3Cp%3Ewith%20many%20thanks%20to%20Alton%20Brown%E2%80%99s%20recipe%3C/p%3E%3Cp%3EServes%204-6%20depending%20on%20size%20of%20dish%3C/p%3E%3Cp%3EInfrared%20thermometer%3C/p%3E%3Cp%3ETake%20a%20medium%20sized%20saucepan%20and%20fill%20with%20about%20an%20inch%20of%20water;%20bring%20to%20a%20boil%20and%20then%20lower%20to%20a%20simmer.%3C/p%3E%3Cp%3ECombine%20the%20egg%20yolks%20and%20the%20sugar%20into%20a%20glass,%20heat-safe%20bowl%20and%20whisk%20well%20until%20completely%20combined.%20Add%20the%20vermouth%20and%20the%20salt,%20and%20then%20place%20the%20bowl%20on%20top%20of%20the%20saucepan%20and%20continue%20to%20whisk,%20letting%20the%20mixture%20get%20very%20light%20and%20foamy%20and%20come%20to%20between%20140%20and%20150%20degrees,%20but%20do%20not%20let%20it%20over-cook.%20Remove%20the%20bowl%20from%20the%20heat%20and%20let%20cool%20slightly%20before%20adding%20to%20the%20whipped%20cream%20canister,%20being%20careful%20to%20not%20go%20over%20the%20max%20fill%20line.%20Close%20the%20canister%20and%20charge%20with%20two%20cartridges,%20making%20sure%20to%20shake%20the%20canister%20between%20charges%20to%20distribute%20the%20gas.%20Refrigerate%20for%20at%20least%20one%20hour%20before%20serving.%3C/p%3E%3Cp%3ETo%20serve:%20invert%20the%20canister%20and%20carefully%20dispense%20the%20sabayon%20into%20serving%20dishes,%20garnish%20with%20berries,%20and%20serve%20immediately.%3C/p%3E){kind=link}
