%20and%20we've%20come%20to%20love%20a%20lot%20of%20the%20dishes.%20We%20also%20love%20to%20recall%20some%20of%20the%20kitchen%20mishaps%20as%20I'm%20sure%20my%20family%20will%20one%20day%20do%20with%20my%20little%20blunders%20(I%20can't%20wait!).%20We%20never%20fail%20to%20laugh%20about%20the%20time%20she%20put%20cinnamon%20in%20tacos%20or%20how%20my%20older%20brother%20karate%20chopped%20her%20pumpkin%20roll%20as%20it%20rested%20on%20the%20counter.%3C/p%3E%3Cp%3EThese%20particular%20muffins%20made%20numerous%20appearances%20throughout%20our%20childhood,%20though%20none%20quite%20so%20amusing%20as%20a%20cinnamon%20taco.%20They're%20chock%20full%20of%20flavor%20with%20carrots,%20coconut,%20cinnamon%20and%20more.%20Plus,%20they%20stay%20moist%20for%20days.%3C/p%3E%3Cp%3EOn%20the%20day%20I%20made%20them,%20%22Morning%20Glory%22%20seemed%20the%20perfect%20name%20too.%20Up%20with%20Claire%20at%205,%20I%20saw%20the%20sun%20come%20up%20on%20what%20turned%20out%20to%20be%20a%20perfect%20September%20day.%20A%20few%20puffy%20white%20clouds%20speckled%20the%20sky,%20but%20the%20sun%20was%20bright%20and%20a%20cool%20breeze%20was%20blowing.%20Perfect%20weather%20for%20a%20warm%20muffin%20and%20a%20hot%20cappuccino%20on%20the%20deck.%3C/p%3E%3Cp%3EMorning%20Glory%20Muffins%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0.%3C/p%3E%3Cp%3ELightly%20grease%2018%202%20%C2%BD-inch%20muffin%20cups,%20or%20line%20them%20with%20paper%20bake%20cups.%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20stir%20together%20the%20flour,%20sugar,%20baking%20powder,%20cinnamon,%20baking%20soda,%20and%20salt.%20With%20a%20wooden%20spoon,%20stir%20in%20carrot,%20apple,%20currants,%20coconut,%20and%20walnuts.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20stir%20together%20the%20eggs,%20cooking%20oil%20and%20vanilla.%20Add%20mixture%20all%20at%20once%20to%20flour%20mixture%20and%20stir%20only%20until%20moistened.%3C/p%3E%3Cp%3EGently%20spoon%20the%20batter%20into%20the%20prepared%20muffin%20cups%20until%20each%20one%20is%20almost%20full.%3C/p%3E%3Cp%3EBake%20for%20about%2030%20minutes%20or%20until%20the%20top%20of%20a%20muffin%20springs%20back%20when%20lightly%20touched.%20Cool%20in%20the%20pan%20set%20on%20a%20wire%20rack%20for%205%20minutes.%20Remove%20muffins%20from%20pan%20and%20cool%20on%20the%20rack.%20Serve%20warm%20or%20at%20room%20temperature.%3C/p%3E%3Cp%3EMake%2018%20muffins.%3C/p%3E){kind=link}
