%20reveal%20day!%20%20I%20was%20assigned%20The%20Tasty%20Cheapskate,%20as%20she%20says%20%22where%20tasty%20and%20cheap%20eat%20together%20(and%20hopefully%20remember%20to%20write%20down%20the%20recipe)%22.%3C/p%3E%3Cp%3EIn%20my%20quest%20to%20continue%20to%20choose%20something%20besides%20a%20dessert%20recipe%20for%20SRC,%20I%20chose%20Morning%20Glory%20Muffins.%20%20One%20of%20my%20favorite%20restaurants%20in%20town%20has%20a%20fabulous%20selection%20of%20muffins%20and%20Morning%20Glory%20is%20one%20of%20my%20favorites.%20%20Never%20having%20made%20Morning%20Glory%20Muffins%20or%20even%20looked%20at%20a%20recipe%20for%20them,%20this%20month's%20choice%20was%20made!!!%3C/p%3E%3Cp%3EThese%20muffins%20have%20fruit%20and%20vegetables%20in%20them,%20so%20as%20muffins%20go,%20they're%20better%20for%20you.%20%20If%20you%20adapt%20the%20recipe%20to%20reduce%20the%20sugar%20and%20the%20oil,%20they%20would%20be%20even%20better%20for%20you.%20%20I%20didn't%20have%20whole%20wheat%20flour,%20so%20I%20used%20all%20purpose%20and%20substituted%20dried%20blueberries%20for%20the%20cranberries%20or%20raisins.%20%20These%20muffins%20are%20delicious,%20very%20moist%20with%20a%20nice%20crunch!!!%3C/p%3E%3Cp%3EMorning%20Glory%20Muffins%3C/p%3E%3Cp%3ERecipe%20Courtesy%20of%20The%20Tasty%20Cheapskate%3C/p%3E%3Cp%3EMakes%20about%2020%20muffins%3C/p%3E%3Cp%3EPrep%20time:%2010%20minutes%3C/p%3E%3Cp%3ECook%20time:%2020%20minutes%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20and%20line%20your%20muffin%20tins.%3C/p%3E%3Cp%3EWhisk%20together%20flour,%20sugar,%20cinnamon,%20baking%20soda%20and%20salt.%3C/p%3E%3Cp%3EAdd%20coconut,%20raisins,%20apple,%20pineapple,%20carrots,%20and%20nuts.%20Stir%20to%3C/p%3E%3Cp%3Ecombine.%20(I%20shredded%20my%20carrots%20and%20apple%20in%20the%20food%20processor,%20which%3C/p%3E%3Cp%3Ewas%20speedy.%20If%20you've%20got%20a%20food%20processor,%20you%20could%20probably%20use%20fresh%3C/p%3E%3Cp%3Epineapple%20too%20and%20just%20sort%20of%20puree%20it%20in%20the%20food%20processor%20before%3C/p%3E%3Cp%3Eyou%20change%20it%20to%20'shred.')%3C/p%3E%3Cp%3EAdd%20eggs,%20oil%20and%20vanilla.%20Blend%20well.%3C/p%3E%3Cp%3ESpoon%20batter%20into%20muffins%20tins.%20Bake%20about%2017-25%20minutes%20or%20until%20a%20knife%20comes%20out%20clean.%3C/p%3E%3Cp%3EI%20am%20linking%20this%20to%20On%20the%20Menu%20Monday%20and%20Miz%20Helen's%20Full%20Plate%20Thursday!%3C/p%3E){kind=link}
