Ingredientes

  • 3 ounce Onion, medium dice
  • 3 ounce Mushrooms, medium dice
  • 2 ounce Butter, clarified
  • 3 ounce Crayfish, medium dice
  • 3 ounce Shrimp, medium dice
  • 3 ounce Scallops, medium dice
  • 4 ounce Dry white wine
  • 3 ounce White sauce, thick
  • 2 ounce Heavy cream
  •     Lemon juice, to taste
  •     Salt and pepper, to taste
  • 1 Tbsp. Minced parsley

Direcciones

  1. YIELD: 4 portions of 2 crepes
  2. Procedure:1. Heat 10" saute/fry pan over medium heat and add in the clarified butter.
  3. Add in onions and mushrooms and cook till softened.
  4. Add in the crayfish, shrimp, and scallops and cook 2-3 min. Remove mix
  5. to a strainer or possibly colander with a container under to reserve the juices.
  6. Add in white wine and seafood juices to pan and reduce over high heat by 2/3.
  7. Add in white sauce, heavy cream, and seafood mix.
  8. Season to taste with lemon juice, salt and pepper and add in the minced parsley.
  9. Divide the filling equally among the 8 crepes and roll up. Bake covered for approximately 10 min.
  10. Serve with appropriate sauce and/or possibly garnish.
