Ingredientes

  • 1/2 lb Mushrooms, coarsely minced
  • 5 Tbsp. Butter or possibly Margarine
  • 1/2 c. Finely Crushed Saltine
  •     Crackers
  • 3/4 c. Minced Green Onion
  • 2 c. (8 ounce) Shredded Jack or possibly
  •     Swiss Cheese
  • 1 c. Small or possibly Large Curd Cottage
  •     Cheese
  • 3 x Large eggs
  • 1/4 tsp Each, Cayenne and Paprika

Direcciones

  1. In a frying pan over medium heat, saute/fry the mushrooms in 3 Tbsp. of butter till limp. Stir in the crushed crackers, then turn into a well-greased 9-inch pie pan. Press mushroom mix proportionately over pan bottom and up the sides.
  2. Heat remaining 2 Tbsp. utter, add in onions, and saute/fry till limp.
  3. Spread onions over crust; sprinkle proportionately with the shredded cheese. In a blender, whirl the cottage cheese, Large eggs, and cayenne till smooth. Pour into crust and sprinkle with paprika.
  4. Bake in a 350 degree oven till a knife inserted in the center comes out clean, about 20 to 25 min. Let stand 10 to 15 min before cutting.
  5. Serve this savory quiche with a fresh spinach or possibly mixed green salad.
