.%20with%20just%20a%20hint%20of%20coconut%20and%20the%20subtle%20flavours%20of%20the%20spices%20soaked%20into%20the%20mushrooms,%20this%20was%20one%20amazing%20dish!%20%20i%20eagerly%20grabbed%20my%20camera%20and%20clicked%20away,%20and%20jotted%20down%20the%20recipes%20and%20notes.%20but%20when%20i%20reviewed%20the%20photos,%20they%20didn%E2%80%99t%20look%20good%20as%20i%20had%20taken%20them%20at%20night%20with%20poor%20lighting%20%20%20so%20i%20decided%20i%20would%20wait%20until%20i%20made%20it%20again%20and%20then%20re-shoot%20it.%20funnily%20enough,%20i%20did%20make%20it%20again,%20but%20forgot%20to%20take%20photos%20(talk%20about%20ironic%20coincidences!).%20well%20then,%20that%E2%80%99s%20when%20i%20decided%20that%20photos%20or%20no%20photos,%20i%20would%20put%20this%20up%20anyways%20%E2%80%93%20i%20mean,%20why%20keep%20a%20wonderful%20recipe%20away%20from%20you%20all%20just%20because%20the%20photo%20gods%20are%20co-operating?%20so%20here%20you%20are%20-%20hope%20you%20like%20it%20as%20much%20as%20i%20do%20:)%20(and%20maybe%20someday,%20everything%20will%20fall%20in%20place%20and%20i%20will%20get%20to%20shoot%20some%20good%20photos%20of%20this%20dish%20-%20fingers%20crossed!%20%20)%3C/p%3E%3Cp%3E*Photo%20from%20Getty%20Images%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E250%20gms%20Mushrooms%20(*I%20have%20tried%20this%20with%20white%20buttom%20mushrooms%20and%20mini%20shitake%20mushrooms%20-%20i%20personally%20preferred%20the%20shitake%20as%20they%20hold%20their%20texture%20better%20even%20as%20they%20absorb%20the%20flavours%20well.)%3C/p%3E%3Cp%3EWash%20and%20pat%20dry%20the%20mushrooms%20and%20slice%20them%20(*If%20you%20are%20using%20shitake%20mushrooms,%20slice%20them%20thin%20as%20they%20tend%20to%20be%20rather%20tough%20and%20may%20not%20cook%20as%20well%20if%20they%20are%20very%20thick.%20If%20you%20are%20using%20button%20mushrooms,%20slice%20them%20slightly%20thick).%20Pop%20the%20mushroom%20slices%20into%20a%20microwave%20bowl%20with%20a%20teaspoon%20of%20water%20and%20cook%20on%20High%20for%201-1/2%20to%202%20minutes.%20(*When%20you%20take%20them%20out,%20the%20mushrooms%20should%20be%20soft%20%E2%80%93%20if%20not%20pop%20them%20back%20in%20for%20another%2030%20seconds.)%20Grind%20the%20paste%20ingredients%20together%20until%20you%20get%20a%20thick,%20smooth%20mixture%20%E2%80%93%20add%20water%20minimally%20and%20only%20if%20needed.%20Put%20a%20non-stick%20saucepan%20on%20medium%20heat,%20add%20the%20oil%20and%20heat%20for%20a%20bit%20and%20then%20saute%20the%20ground%20paste%20until%20it%20loses%20its%20raw%20smell%20and%20starts%20to%20leave%20the%20sides%20of%20the%20pan.%20Drain%20out%20any%20excess%20water%20from%20the%20mushrooms%20and%20mix%20it%20in.%20Add%20the%20coconut%20milk%20and%20water%20and%20blend%20(use%20less%20or%20more%20water,%20depending%20on%20the%20thickness%20of%20the%20curry%20you%20prefer)%20and%20allow%20the%20curry%20to%20come%20to%20a%20gentle%20simmer.%20Turn%20off%20once%20it%20starts%20to%20simmer%20and%20take%20off%20the%20heat%20(keeping%20it%20on%20heat%20for%20too%20long%20will%20cause%20the%20mushrooms%20to%20emit%20water%20and%20make%20the%20curry%20too%20watery).%20Serve%20hot%20with%20rice%20or%20breads.%3C/p%3E%3Cp%3EPosted%20in%20cooking,%20dinner%20for%20one%3C/p%3E){kind=link}
