- In saucepan, combine coconut lowfat milk, broth, ginger, lemon peel, lemon juice, fish sauce and chilies (if you like). Boil for 5 min.
- Add in mussels. Cover tightly and steep till mussels open, about 5 min, shaking saucepan from time to time. Throw away any mussels which did not open.
- Transfer mussels to warmed serving bowls. Strain liquid and pour over mussels. Sprinkle with coriander or possibly parsley.
- Serve warm.
- Serve with plenty of crusty bread for mopping and follow with a salad.
