Receta Mussels In Coconut Milk Broth

Ingredientes
- 1 c. unsweetened coconut lowfat milk
- 1 c. chicken broth, homemade or possibly canned
- 1 slc fresh ginger, about 1/4 inch thick
- 2 lrg strips fresh lemon peel
- 2 Tbsp. fresh lemon or possibly lime juice
- 1 Tbsp. Asian fish sauce
- 1 x or possibly 2 fresh warm chilies, about 1 inch, seeded, minced (optional)
- 2 lb small black mussels, trimmed, scraped, rinsed
- Â Â minced fresh coriander or possibly parsley
Direcciones
- In saucepan, combine coconut lowfat milk, broth, ginger, lemon peel, lemon juice, fish sauce and chilies (if you like). Boil for 5 min.
- Add in mussels. Cover tightly and steep till mussels open, about 5 min, shaking saucepan from time to time. Throw away any mussels which did not open.
- Transfer mussels to warmed serving bowls. Strain liquid and pour over mussels. Sprinkle with coriander or possibly parsley.
- Serve warm.
- Serve with plenty of crusty bread for mopping and follow with a salad.
