- 4 shallots, finely chopped
- 4 garlic cloves, peeled and minced
- 1 cup dry white wine
- 1 cup tomatoes, seeded and diced
- ¼ cup freshly chopped flat leaf parsley, divided
- 2 tablespoons freshly chopped thyme
- 2 pounds fresh mussels, shells scrubbed and beards removed (see note)
- Salt, to taste
- Freshly ground black pepper, to taste
