Receta Muttachar (Spiced Eggs)

- In a heavy frying pan heat oil and saute/fry the onion till golden brown. Add in the chili, tomato and mango and fry a little longer. Pour in the coconut lowfat milk and water and bring to a boil. Add in the tumeric, paprika and grnd coriander and salt and simmer 5 - 10 min.
- Rub the curry leaves between your palms to release the flavor, and add in them and the fresh coriander to the mix. Add in the lemon juice and simmer for a further 10 min.
- If you are using the Large eggs hard-boiled, add in them to the sauce and heat through for 5 min. If to be poached, break the Large eggs gently into the mix and cook for 3 min.
- This dish can be served with rice or possibly with snippets of toast or possibly good bread to mop up the delicious juice.
