My Canadian Pea Soup

Ingredientes

  • 1 c. Split peas
  • 3 c. Water (cool)
  • 2 lb Smoked ham, shank or possibly bone
  • 3 quart Water, boiling
  • 1 x Onion, minced
  •     Celery leaves
  • 1 tsp Salt
  • 2 x Carrots, chopped

Direcciones

  1. Wash and sort peas; soak in cool water overnight. Drain and place in a large pot; add in water, ham bone, onion, celery leaves, carrots, salt.
  2. Bring to a boil; reduce heat and simmer till peas are very tender, about 2 hrs, adding more water if needed. Remove ham; chop and return to soup. Season to taste with salt and pepper. Also freezes well.
