Ingredientes
- ¼ cup olive oil
- 2 tbsp cider vinegar
- 1 tbsp balsamic vinegar
- 2 tsp Dijon mustard
- 2 tsp honey
- Pinch each salt and pepper
- 4 medium sweet potatoes, par-cooked
- (To par-cook, pierce the sweet potatoes with a fork and cook in the microwave for about 3 minutes)
- 1 tbsp olive oil
- 1/2 red onion, cut into small pieces
- 2 apples, peeled and cut into equal sized cubes
- 2 tbsp coarsely chopped fresh flat-leaf parsley
