%20birthday%20was%20coming%20up%20and%20my%20sister%20in-law,%20Kimberlee,%20has%20been%20pregnant%20with%20a%20beautiful%20baby%20%22fill-in-the-blank%22%20-%20we%20don't%20know%20what%20gender%20it%20is%20yet,%20they%20want%20it%20to%20be%20a%20surprise.%20Kimberlee%20normally%20does%20all%20the%20birthday%20dinner%20cooking%20and%20baking.%20I%20would%20usually%20only%20bring%20a%20salad%20which%20is%20the%20easy%20part%20for%20me!%20However,%20this%20year%20Kimberlee%20asked%20me%20if%20I%20could%20bring%20a%20salad%20(I'll%20describe%20this%20dish%20in%20a%20later%20post!)%20AND%20dessert.%20Shoot.%20What%20kind%20of%20dessert%20am%20I%20going%20to%20make%20for%20my%20in-laws!?%20It's%20a%20Birthday%20Party.%20I%20need%20to%20make%20a%20cake.%20A%20Birthday%20Cake!?%20I've%20never%20made%20it%20before.%20That's%20when%20the%20challenging%20feeling%20and%20my%20nervousness%20came%20into%20the%20equation.%3C/p%3E%3Cp%3EDeliciousness%20+%20Look%20+%20History/%20(Challenge%20x%20Nervousness)%20=%20Beautiful%20Birthday%20Cake%3C/p%3E%3Cp%3EPlan%20B:%20Buy%20a%20cake%20at%20a%20bakery%20store%20nearby.%20Business%20plans%20need%20a%20plan%20B;%20so%20do%20I!%3C/p%3E%3Cp%3EI%20was%20quite%20excited%20to%20make%20this%20cake%20actually.%20It's%20a%20good%20time%20to%20try%20out%20one%20of%20the%20recipes%20from%20the%20Ghirardelli%20Chocolate%20Cookbook%20I%20got%20from%20Kimberlee%20for%20my%20Birthday.%20I%20mixed%20and%20matched%20the%20recipes%20from%20this%20book%20-%20just%20like%20the%20mix%20&%20match%20concept%20with%20clothes!%20So,%20I%20decided%20to%20go%20with%20the%20Devil's%20Food%20cake%20and%20mocha%20frosting%20to%20balance%20it%20out.%20The%20weird%20thing%20was%20the%20cake%20recipe%20didn't%20require%20adding%20coffee%20or%20salt.%20From%20what%20I've%20heard%20and%20experienced%20myself,%20coffee%20does%20bring%20out%20the%20chocolate%20flavor.%20%20%20Hmm..let's%20give%20it%20a%20shot.%3C/p%3E%3Cp%3EDevil's%20Food%20Cake%20with%20Mocha%20Frosting%20Yield:%2012-16%20servings%3C/p%3E%3Cp%3ECake:%20-The%20book,%20of%20course,%20will%20say%20Ghirardelli%20Chocolate.%20But%20you%20can%20use%20any%20good%20chocolate%20bars.%3C/p%3E%3Cp%3EDirections%20for%20Cake:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%20degree%20F.%20Butter%20the%20bottoms%20and%20sides%20of%20two%209-inch%20round%20cake%20pans,%20and%20line%20with%20parchment%20paper%3C/p%3E%3Cp%3ETo%20make%20the%20cake,%20place%20on%20the%20top%20of%20a%20double%20boiler%20or%20on%20a%20heatproof%20bowl%20(like%20I%20did%20in%20this%20recipe)%20over%20barely%20simmering%20water,%20melt%20together%20the%20bittersweet%20chocolate,%20butter,%20sugar,%20and%20corn%20syrup,%20stirring%20occasionally%20until%20smooth.%20Remove%20from%20the%20heat%20and%20set%20aside%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20sift%20together%20the%20flour,%20cocoa,%20and%20baking%20soda.%20Gently%20mix%20in%20the%20melted%20chocolate%20mixture.%20(The%20recipe%20doesn't%20tell%20you%20to%20use%20a%20mixer%20but%20I%20did.%20It%20works%20better%20for%20the%20mixture)%3C/p%3E%3Cp%3EAdd%20eggs,%20one%20at%20a%20time,%20vanilla,%20and%20milk%20and%20beat%20it%20at%20medium%20high%20speed%20until%20blended%3C/p%3E%3Cp%3EDivide%20the%20mixture%20evenly%20between%20the%20two%20prepared%20pans%3C/p%3E%3Cp%3EBake%20for%2025-29%20mins,%20until%20firm%20to%20the%20touch.%20Check%20by%20poking%20a%20toohtpick%20in%20it%20and%20if%20it%20comes%20out%20clean,%20then%20you're%20good!%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20cool%20on%20wire%20racks.%20When%20cool,%20turn%20out%20of%20the%20pans.%3C/p%3E%3Cp%3EThe%20recipe%20makes%202%20layers%20but%20I%20need%204%20for%20a%20tall%20layer%20cake.%20I%20made%20the%20second%20batch%20with%20the%20same%20proportions%3C/p%3E%3Cp%3EDirections%20for%20Frosting:%3C/p%3E%3Cp%3EWhile%20the%20cake%20is%20cooling,%20let's%20make%20the%20frosting.%20Melt%20the%20milk%20chocolate%20on%20the%20top%20of%20a%20double%20boiler%20or%20in%20a%20heatproof%20bowl%20over%20barely%20simmering%20water,%20stirring%20until%20smooth.%3C/p%3E%3Cp%3EDissolve%20the%20coffee%20in%20the%20boiling%20water.%20I%20didn't%20have%20instant%20coffee.%20I%20used%201/4%20cup%20espresso%20instead.%3C/p%3E%3Cp%3EAdd%20the%20coffee%20all%20at%20once%20to%20the%20chocolate%20stirring%20continually%20until%20smooth.%20Cool%20completely%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20beat%20the%20cream%20at%20high%20speed%20until%20stiff%20peaks%20form.%20Gently%20fold%20the%20chocolate%20mixture%20into%20the%20whipped%20cream.%3C/p%3E%3Cp%3EBe%20VERY%20CAREFUL%20here,%20I%20overbeat%20the%20cream%20the%20first%20time%20and%20it%20seemed%20like%20it%20passed%20the%20stiff%20peak%20stage.%20The%20cream%20became%20bad.%20I%20had%20to%20redo%20it.%20The%20second%20time%20I%20got%20it%20right!%20Yippee!%3C/p%3E%3Cp%3EI%20chilled%20it%20in%20the%20freezer%20for%2010%20mins%20before%20assembling%20the%20cake%3C/p%3E%3Cp%3ETo%20assemble%20the%20cakes,%20place%20one%20layer%20on%20a%20serving%20plate%20(if%20you%20have%20one).%20I%20don't%20have%20one%20so%20I%20assembled%20them%20on%20a%20parchment%20paper%20:(.%20Spread%20one%20third%20of%20the%20frosting%20on%20top%20of%20one%20cake%20layer,%20then%20set%20the%20second%20layer%20on%20top,%20apply%20frosting,%20then%20the%20third%20layer,%20apply%20frosting,%20and%20finally%20add%20the%20forth%20layer%20of%20cake.%20Use%20the%20remaining%20frosting%20to%20spread%20over%20the%20top%20and%20sides%20of%20the%20cake%20assembly.%20%20The%20final%20step%20is%20to%20garnish%20the%20cake!%20That's%20the%20fun%20part%20;)%3C/p%3E%3Cp%3ENo%20double%20boiler,%20don't%20worry.%20You%20can%20do%20like%20I%20did%20in%20the%20photos.%20It%20works%20just%20fine.%3C/p%3E%3Cp%3EBelow%20is%20my%20manual%20for%20the%20day%3C/p%3E%3Cp%3ESift%20flour,%20cocoa,%20and%20baking%20soda%3C/p%3E%3Cp%3EAdd%20eggs,%20one%20at%20a%20time..%3C/p%3E%3Cp%3EBeat%20the%20mixture%20till%20smooth%20and%20pour%20to%20cake%20pans%20evenly%3C/p%3E%3Cp%3EChop,%20chop,%20chop,%20the%20milk%20chocolate%3C/p%3E%3Cp%3EMelt%20together%20chocolate,%20butter,%20and%20brown%20sugar%3C/p%3E%3Cp%3EThat's%20me%20making%20cake!%20=)%3C/p%3E%3Cp%3EThe%20cakes%20are%20done%20and%20resting%20on%20a%20wire%20rack%20while%20I'm%20working%20on%20the%20second%20batch%3C/p%3E%3Cp%3EMocha%20frosting%20is%20done.%20I%20didn't%20think%20the%20frosting%20would%20be%20this%20simple,%20really.%20It%20tastes%20wonderful.%20I%20still%20have%20the%20leftover%20in%20my%20fridge%20to%20eat%20with%20cookies%20haha.%3C/p%3E%3Cp%3EDecoration%20begins..first%20layer%20is%20done.%3C/p%3E%3Cp%3ESpread%20the%20frosting%20on%20top%20and%20side,%20and%20on%20each%20layer%20of%20the%20cake%3C/p%3E%3Cp%3EIt's%20soon%20to%20be%20a%20Birthday%20cake%20and..%3C/p%3E%3Cp%3EYippee!%20The%20first%20cake%20is%20done%20and%20my%20first%20attempt%20is%20%22I-think-it-is-a-success%22.%3C/p%3E%3Cp%3EReady%20to%20be%20delivered%20to%20the%20Couilliard%20Residence.%3C/p%3E%3Cp%3EHappy%20Birthday%20Barb!%3C/p%3E%3Cp%3EWe're%20full..yummy!%3C/p%3E){kind=link}
