%20moar%20kuzhambu,%20beans%20usili,%20yellow%20pumpkin%20olan,%20pumpkin%20peel%20thogayal,%20keerai%20masiyal%20along%20with%20rice.%20Among%20all%20the%20dishes,%20the%20mango%20moar%20kozhambu%20was%20a%20surprise%20for%20me%20and%20such%20a%20delight%20for%20the%20taste%20buds.%20Big%20chunks%20of%20ripe%20Banganapalli%20mango%20steeped%20in%20buttermilk%20mixed%20with%20freshly%20ground%20spices,%20mixed%20with%20rice%20was%20a%20new%20kind%20of%20high%20for%20me.%20I%20immediately%20asked%20her%20how%20she%20made%20it%20and%20Maami%20was%20generous%20enough%20to%20share%20the%20recipe%20with%20me.%20Of%20course%20she%20didn't%20give%20me%20exact%20quantities%20because%20they%20don't%20measure%20out%20ingredients%20using%20spoons%20in%20our%20homes.%20I%20assumed%20it%20would%20be%20a%20handful%20of%20this%20and%20a%20bit%20of%20that%20and%20it%20turned%20out%20beautifully%20for%20today's%20lunch.%20See%20that%20big%20mango%20slice%20intact%20on%20my%20lunch%20plate%20below?%20That's%20how%20it%20should%20turn%20out%20in%20the%20end%20-%20cooked%20but%20intact%20:-)%3C/p%3E%3Cp%3ELunch%20is%20served%3C/p%3E%3Cp%3EA%20couple%20of%20weeks%20ago,%20I%20made%20another%20kadhi%20using%20ripe%20mangoes.%20That%20one%20was%20Fajeto,%20a%20Gujarati%20style%20kadhi%20where%20ripe%20mango%20is%20ground%20to%20a%20puree%20and%20added%20to%20buttermilk%20thickened%20with%20chick%20pea%20flour.%20But%20this%20recipe%20keeps%20the%20whole%20mango%20slice%20intact%20and%20it%20absorbs%20the%20flavours%20of%20the%20curry%20so%20beautifully%20that%20I'd%20happily%20cast%20my%20vote%20for%20the%20Moar%20Kuzhambu%20over%20the%20Fajeto.%20You%20must%20try%20this%20recipe%20while%20the%20mangoes%20are%20in%20season.%20This%20keeps%20well%20in%20the%20fridge%20for%20a%20couple%20of%20days,%20so%20you%20could%20make%20in%20advance%20and%20keep%20refrigerated%20for%20week%20night%20dinners%20as%20well.%3C/p%3E%3Cp%3EMango%20Moar%20Kuzhambu%20(Ripe%20mango%20-%20yogurt%20curry)%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3ETakes%20less%20than%2030%20minutes%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E4%20dried%20red%20chillies%3C/p%3E%3Cp%3ESoak%20the%204%20red%20chillies,%20cumin%20seeds,%20tur%20dal%20in%20some%20warm%20water%20for%2030%20mins-1%20hour%20and%20grind%20to%20a%20fine%20paste%20along%20with%20the%20coconut,%20using%20up%20to%20half%20cup%20of%20water%20or%20so.%3C/p%3E%3Cp%3EIn%20a%20wide%20pan,%20bring%202%20cups%20of%20water%20to%20a%20boil.%20Cut%20each%20mango%20into%20two%20halves,%20very%20close%20to%20the%20stone.%20No%20need%20to%20peel%20the%20fruit.%20Place%20all%206%20mango%20chunks%20in%20the%20boiling%20water%20gently,%20adding%20the%20ground%20masala%20to%20this%20along%20with%20the%20salt.%20Bring%20to%20a%20simmer%20and%20let%20this%20cook%20for%20roughly%2010%20minutes,%20until%20mango%20flesh%20is%20soft%20and%20cooked%20but%20not%20falling%20apart.%3C/p%3E%3Cp%3EAdd%20the%20thinned%20yogurt%20to%20this.%20Stir%20gently%20and%20bring%20to%20a%20simmer%20on%20medium%20to%20low%20flame.%20Remove%20from%20flame%20and%20keep%20aside.%3C/p%3E%3Cp%3EFor%20tempering,%20heat%20the%20coconut%20oil%20in%20a%20tempering%20ladle%20or%20small%20kadai.%20Add%20the%20fenugreek%20seeds,%20curry%20leaves,%20red%20chillies,%20mustard%20seeds.%20Once%20mustard%20seeds%20start%20spluttering,%20transfer%20this%20over%20the%20moar%20kozhambu.%20Serve%20hot%20with%20rice.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3EI'm%20sure%20you%20can%20do%20this%20with%20any%20ripe%20mango,%20but%20banganapalli%20being%20a%20variety%20with%20generous%20flesh%20suits%20this%20dish%20well.%20Also,%20it%20holds%20it%20shape%20well%20and%20does%20not%20turn%20into%20mush%20on%20simmering%20in%20the%20curry.%3C/p%3E%3Cp%3EWhat%20people%20who%20tried%20this%20have%20to%20say!%3C/p%3E%3Cp%3E@saffrontrail%20made%20and%20ate%20this:D%20romba%20super!%20The%20proportions%20u've%20told%20is%20just%20perfect...%20:)%3C/p%3E%3Cp%3E%E2%80%94%20sowmya%20(@vishalsowmya)%20May%2030,%202013%3C/p%3E%3Cp%3EOther%20varieties%20of%20Moar%20Kuzhambu%20/%20Mor%20Kozhambu%3C/p%3E%3Cp%3EThe%20regular%20one%3C/p%3E%3Cp%3EMorkeerai%20-%20a%20variety%20with%20spinach%20in%20it%3C/p%3E){kind=link}
