My New Favorite Meatloaf

Based on Cooks' Illustrated recipe.

Ingredientes

  • 2 lbs. ground chuck
  • 2 chopped scallions
  • 1/4 tsp. garlic powder
  • 2 beaten eggs
  • 1/2 T Worcestershire
  • 2 tsp. Dijon mustard
  • 1/4 C milk
  • 1/2 C Panko crumbs
  • 1 T minced fresh parsley or 1/2 T dry
  • 1/4 tsp. dry thyme
  • s & p to taste ( I use seasoned salt and pepper)
  • dash Tabasco
  • 6-8 sliced bacon
  • glaze:
  • 1/2 C Heinz Chili Sauce
  • 1/4 C ketchup
  • 1/4 C brown sugar

Direcciones

  1. Heat oven to 400 degrees.
  2. Combo meatloaf ingredients together and shape into square or oval shape.
  3. Make the glaze and slather half of it on the meatloaf.
  4. Wrap loaf with bacon, tucking the ends under the loaf.
  5. Bake 20 minutes, then turn oven down to 350 and bake another 30 minutes.
  6. Remove loaf from oven and wrap in foil.
  7. Let rest 20-30 minutes before slicing.
  8. Serve with rest of sauce.
