%3C/p%3E%3Cp%3EIve%20been%20sick%20awhile%20with%20some%20gall%20bladder%20issues%20so%20I%20haven't%20been%20cooking%20much....haven't%20been%20eating%20much%20either.%20But%20my%20daughter%20asked%20me%20for%20my%20recipe%20for%20the%20Chocolate%20Bark%20that%20I%20usually%20make%20each%20yr%20and%20send%20out.%20I%20searched%20all%20the%20places%20that%20I%20post%20my%20recipes%20and%20realized%20I%20never%20posted%20this%20one%20here%20ever.%20The%20original%20comes%20from%20here%20http://www.foodnetwork.com/recipes/emeril-lagasse/three-chocolate-bark-with-spiced-pecans-and-dried-cherries-recipe2/index.html%20%20But%20I%20make%20a%20few%20changes%20to%20it%20based%20on%20what%20I%20like.%20So%20Ill%20post%20the%20recipe%20here%20but%20with%20my%20changes.%20Feel%20free%20to%20do%20it%20however%20you%20want.%20I%20just%20know%20I%20cannot%20make%20enough%20of%20it%20at%20Christmas,%20everyone%20wants%20to%20be%20on%20my%20list%20for%20this!%3C/p%3E%3Cp%3EI%20soak%20the%20dried%20cherries%20in%20brandy%20earlier%20in%20the%20day.%20I%20heat%20the%20brandy%20up%20just%20a%20bit%20and%20pour%20enough%20over%20to%20cover.%20The%20cherries%20will%20plump%20up%20and%20absorb%20some%20of%20the%20brandy.%20I%20like%20to%20leave%20them%20whole%20but%20you%20could%20chop%20them%20first%20if%20you%20want%20smaller%20pieces.%20When%20ready%20to%20use%20drain%20and%20let%20sit%20on%20a%20paper%20towel%20till%20needed.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20F.%3C/p%3E%3Cp%3EIn%20a%20large%20saute%20pan,%20melt%204%20tablespoons%20of%20butter.%20Add%20the%20brown%20sugar%20and%20stir%20until%20the%20sugar%20dissolves%20and%20is%20bubbly.%20Add%20the%20pecans.%20Season%20the%20pecans%20with%20salt,%20cayenne,%20nutmeg,%20and%20cinnamon.%20Continue%20to%20cook,%20stirring%20constantly,%20until%20the%20sugar%20starts%20to%20caramelize%3C/p%3E%3Cp%3Eand%20coat%20the%20pecans%20evenly.%20Cook%20for%20about%204%20minutes.%20Remove%20the%20pan%3C/p%3E%3Cp%3Efrom%20the%20heat%20and%20spread%20the%20pecans%20over%20a%20parchment%20lined%20baking%20sheet.%3C/p%3E%3Cp%3EPlace%20the%20pan%20in%20the%20oven%20and%20roast%20the%20pecans%20for%20about%206%20minutes.%20Remove%20the%20pan%20from%20the%20oven%20and%20cool%20completely.%20Break%20the%20pecans%20into%20small%20pieces.%3C/p%3E%3Cp%3ESprinkle%20the%20pecans%20and%20soaked%20cherries%20in%20a%20lg.%20baking%20pan....like%20a%20jellyroll%20pan%20with%20edges.%20%20In%20three%20separate%20mixing%20bowls,%20add%20each%20type%20of%20chocolate%20into%20the%3C/p%3E%3Cp%3Eindividual%20bowls.%20Place%20the%20bowls%20over%20a%20saucepan%20half%20filled%20with%20water%20that%20has%20come%20to%20a%20boil.%20After%20about%202%3C/p%3E%3Cp%3Eminutes%20over%20the%20heat,%20the%20chocolate%20will%20start%20to%20melt.%20I%20do%20these%20in%20the%20order%20of%20what%20layer%20I%20want%20on%20the%20bottom,%20working%20my%20way%20up%20to%20white%20chocolate.%20This%20way%20I%20only%20need%20one%20pot.%20Stir%20each%3C/p%3E%3Cp%3Echocolate%20until%20totally%20melted.%20Remove%20the%20chocolate%20from%20the%20heat%20and%3C/p%3E%3Cp%3Estir%201%20tablespoon%20of%20butter%20into%20each%20bowl%20of%20chocolate.%20%20Using%20a%20spatula,%3C/p%3E%3Cp%3Espread%20the%20mixture%20out%20evenly%20back%20and%20forth%20to%20about%201/4-inch%20thick.%20When%20you%20add%20the%20next%20layer%20of%20chocolate,%20swirl%20it%20thru%20the%20bottom%20layer%20if%20its%20still%20soft.%20In%20this%20way,%20with%20each%20chocolate%20type,%20you%20can%20see%20them%20all.%3C/p%3E%3Cp%3EEither%20place%20the%20marble%20in%20the%20refrigerator%20or%20allow%20to%20sit%20out%20until%3C/p%3E%3Cp%3Eset,%20about%20a%20couple%20of%20hours.%20Break%20the%20bark%20into%20medium%20pieces%20and%3C/p%3E%3Cp%3Eserve.%3C/p%3E%3Cp%3EI%20buy%20my%20chocolate%20from%20Traders%20Joes.%20Their%20one%20lb.%20bars%20are%20reasonably%20priced%20and%20its%20a%20very%20good%20chocolate.%20The%20better%20the%20chocolate%20you%20use,%20the%20better%20this%20is.%3C/p%3E){kind=link}
