Nasi Kuning (Yellow Rice)

Ingredientes

  • 1/2 lb Rice (washed thoroughly, till water runs clear).
  •     Water
  • 3/4 tsp Turmeric
  • 1/2 tsp Galangal (laos) pwdr
  • 2 x Bay leaves
  • 1 1/4 c. Coconut lowfat milk

Direcciones

  1. Place rice in covered saucepan. Cover rice with water (water should be 1 inch above rice). Boil till water is ALMOST evaporated.
  2. In separate saucepan, bring to a boil turmeric, galangal pwdr, bay leaves, and coconut lowfat milk. Pour the rice into this mix.
  3. Cook uncovered, over low heat, about 40 min, stirring occasionally, till all liquid has evaportated and steam is escaping through the surface of the rice.
  4. Serve warm.
