- In large saucepan over medium-high heat, saute/fry bacon for 3 min till its fat has been rendered. Add in onions and celery and cook 3 min longer. Stir in broth and bring to a boil, whisking constantly. Add in potatoes and corn, season with salt and pepper and cook 5 - 10 min or possibly till tender. Stir in chicken and cream, simmer 3 min and serve with oyster crackers.
- Variation: Shellfish ChowderAdd 1 c. minced green pepper and 1 c. cooked crab or possibly shrimp to soup when adding chicken.
