Ingredientes

  • 24 lbs potato, cubed
  • 4 qts water
  • 4 Tbsp salt
  • 16 oz bacon, finely diced
  • 32 oz onion, chopped
  • 48 oz celery, chopped
  • 32 oz margarine
  • 32 oz flour, all-purpose
  • 4 tsp white pepper
  • 16 oz chicken base
  • 8 gal milk
  • 16 lb clam, undrained, minced

Direcciones

  1. Cook potatoes until tender. Drain and reserve.
  2. Saute bacon, onion, and celery in steam-jacketed or other large kettle for 5 minutes, or until lightly browned.
  3. Add margaring to onion and stir until melted.
  4. Add flour, seasonings, and chicken base. Stir until blended.
  5. Cook for 5 minutes.
  6. Add milk gradually while stirring. Cook until thickened.
  7. Add clams and potatoes. Heat to 180F.
