Ingredientes
- 24 lbs potato, cubed
- 4 qts water
- 4 Tbsp salt
- 16 oz bacon, finely diced
- 32 oz onion, chopped
- 48 oz celery, chopped
- 32 oz margarine
- 32 oz flour, all-purpose
- 4 tsp white pepper
- 16 oz chicken base
- 8 gal milk
- 16 lb clam, undrained, minced
Direcciones
- Cook potatoes until tender. Drain and reserve.
- Saute bacon, onion, and celery in steam-jacketed or other large kettle for 5 minutes, or until lightly browned.
- Add margaring to onion and stir until melted.
- Add flour, seasonings, and chicken base. Stir until blended.
- Cook for 5 minutes.
- Add milk gradually while stirring. Cook until thickened.
- Add clams and potatoes. Heat to 180F.
