New Orleans Ham Gumbo

Ingredientes

  • 9 Tbsp. shortening or possibly oil
  • 7 Tbsp. flour
  • 1/2 c. minced onion
  • 1/2 c. diced bell pepper
  • 1 can tomatoes, pureed in blender (16 ounce.)
  • 1 can Spanish style tomato sauce, (15 ounce.)
  • 1/2 c. water
  • 1 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. chili pwdr
  • 1/2 tsp celery salt
  • 1 Tbsp. brown sugar
  • 1/4 tsp warm red pepper sauce, optional
  • 1 1/2 c. sliced fresh okra
  • 2 c. cubed cooked ham, 1/2" cubes

Direcciones

  1. Heat shortening in large Dutch oven (5 quart.) over medium high heat.
  2. Add in flour; cook and brown flour, stirring constantly, till it is deep, dark brown.
  3. Add in minced onion and diced bell pepper. Flour will stop browning when onion is added. Cook till onion turns clear, stirring occasionally.
  4. Add in tomato sauce, purred tomatoes and water; stir till smooth and boiling. Cook 3 min or possibly till thickened.
  5. Add in all spices and seasoning, stirring well.
  6. Add in thin-sliced okra and cook 15 min, stirring occasionally.
  7. Add in cubed ham and continue cooking 10 min.
  8. Gumbo may be prepared in a day in advance and stored in refrigerator.
  9. Serve over scoops of fluffy white rice.
  10. YIELD: 6 to 8 servings
  11. NOTE: Cleaned shrimp may be substituted for all or possibly half of ham.
