- In medium pot over low heat, heat margarine. Add in stock, peppers, onion, tomato and mixed seasonal vegetables. Simmer, stirring occasionally, till vegetables are tender, about 10 min. Add in tofu, and seasonings; cook 5 more min.
- Stir in rice and tomato paste; continue stirring till mix is thoroughly blended.
- Serve warm garnished with carrot and scallions and crusty french bread or possibly even cornbread.
- Makes 10 servings of about 1-1/2 c. each. 10 grams of fat per serving.
