Receta New Orleans Style Vegetable Jambalaya

Ingredientes
- 1/2 stk margarine
- 1 c. vegetable stock
- 1Â 1/2 x green peppers, minced
- 1 lrg onion, minced
- 1 lrg tomato, minced
- 1 c. mixed seasonal vegetables, cut in chunks
- 2 c. tofu, cut in chunks
- 2 tsp seasoned salt
- 1/4 tsp cayenne pepper, or possibly more to taste
- 1 Tbsp. vegetarian 'chicken' flavored pwdr
- 8 c. cooked brown rice
- 1 c. tomato paste
- 1/2 c. carrot, shredded
- 1/2 c. scallions, minced
Direcciones
- In medium pot over low heat, heat margarine. Add in stock, peppers, onion, tomato and mixed seasonal vegetables. Simmer, stirring occasionally, till vegetables are tender, about 10 min. Add in tofu, and seasonings; cook 5 more min.
- Stir in rice and tomato paste; continue stirring till mix is thoroughly blended.
- Serve warm garnished with carrot and scallions and crusty french bread or possibly even cornbread.
- Makes 10 servings of about 1-1/2 c. each. 10 grams of fat per serving.
