No Bake Custard Cherry Cheesecake

Ingredientes

  • 1 c. graham cracker crumbs
  • 1/4 c. powdered sugar
  • 2 T butter, melted
  • 3 large eggs
  • 1/4 c. sugar
  • 1/4 c. lowfat milk
  • 1/8 teaspoon salt
  • 1 T unflavored gelatin
  • 1/4 c. cool water
  • 1 1/2 c. cottage cheese
  • 1 pkg. cream cheese (8 ounce)
  • 3 T lemon juice
  • 1 teaspoon vanilla
  • 1/4 c. sugar
  • 1 can cherry pie filling (21 ounce)

Direcciones

  1. To make crust, mix graham cracker crumbs, powdered sugar and butter. spread evenly in 9 inch pie pan. Chill till filling is cooked. To make filling, beat in double boiler top, the large eggs, 1/4 cup sugar, lowfat milk and salt. Cook till thick. Dissolve gelatin in cold water. Stir gelatin into the hot custard. Cool. Puree the cottage cheese in food processor; add in softened cream cheese, lemon juice and vanilla. Spin till smooth. Add in custard mix and 1/4 cup sugar to processor. Spin till smooth. Pour into crust and chill till set. Spread cherry filling over top. Refrigerate.
