%20rambutans%20(six%20for%20%C2%A31)%20loquats%20(a%20bowl%20for%20%C2%A31)%20and%20%20heaped%20punnets%20of%20raspberries%20which%20I%20assumed%20were%20%C2%A31%20each.%20Imagine%20my%20surprise%20when%20he%20put%20two%20in%20my%20bag!%20Jake%20had%20a%20friend%20coming%20over%20to%20do%20some%20revision%20with%20him%20and%20I%20was%20meandering%20down%20the%20High%20Street,%20planning%20what%20to%20dish%20up%20for%20dinner%20later.%20I%20decided%20on%20ice-cream%20for%20which%20the%20raspberries%20were%20destined,%20a%20roast%20chicken%20with%20roast%20cauliflower%20and%20chickpeas%20(hello%20Elaine!),%20the%20first%20potato%20salad%20of%20the%20year%20and%20a%20crunchy%20green%20salad.%20As%20I%20was%20unloading%20the%20shopping%20I%20remember%20thinking%20that%20I%20would%20have%20to%20throw%20out%20most%20of%20the%20raspberries%20as%20they%20were%20probably%20mouldy%20but%20other%20than%203%20or%204%20which%20had%20begun%20to%20turn%20the%20rest%20were%20absolutely%20fine%20%E2%80%93%20what%20a%20bargain!%20I%20cooked%20them%20down%20with%20some%20cinnamon%20scented%20icing%20sugar%20left%20over%20from%20Christmas%20baking%20and%20swirled%20some%20through%20nearly%20set%20vanilla%20bean%20ice%20cream.%20I%20served%20it%20topped%20with%20more%20of%20the%20raspberry%20coulis%20-%20the%20teens%20loved%20it!%3C/p%3E%3Cp%3ENow%20I%20know%20that%20cinnamon%20and%20raspberries%20seem%20like%20an%20odd%20combination%20but%20it%20really%20works!%20My%20recipe%20also%20uses%20a%20fresh%20vanilla%20bean.%20There%E2%80%99s%20a%20great%20article%20here%20on%20how%20to%20get%20the%20seeds%20out%20and%20what%20to%20do%20with%20the%20pod%20but%20you%20can%20also%20substitute%20a%20teaspoon%20of%20vanilla%20bean%20paste%20instead.%20%20The%20secret%20to%20a%20soft%20no-churn%20ice%20cream%20is%20the%20addition%20of%20%20a%20little%20alcohol.%20As%20it%20has%20a%20low%20freezing%20point,%20it%20helps%20to%20keep%20the%20ice%20cream%20soft.%20I%20only%20had%20some%20fino%20sherry%20to%20hand%20which%20leant%20a%20subtle%20yet%20lovely%20fresh%20flavour%20to%20the%20ice%20cream.%20You%20can%20substitute%20this%20for%20vodka%20which%20will%20not%20add%20any%20flavour%20at%20all.%20%20I%20have%20an%20ice%20cream%20maker%20which%20I%20do%20love%20to%20use%20but%20ever%20since%20I%20discovered%20this%20quick%20and%20easy%20way%20to%20make%20ice%20cream,%20I%20rarely%20use%20it.%20No%20more%20making%20custard%20and%20freezing%20the%20lonely%20egg%20whites!%20I%20first%20wrote%20about%20this%20when%20I%20posted%20my%20recipe%20for%20Lime%20Ice%20Cream%20in%20a%20Ginger%20Snap%20Crust%20%20-%20if%20you%20missed%20that%20post,%20do%20skim%20through%20it%20as%20it%20has%20some%20interesting%20information%20on%20the%20magic%20ingredient%20and%20some%20delicious%20ingredient%20combinations%20too.%20P.S.%20What%20I%20learnt%20today%20%E2%80%93%20ice%20cream%20is%20really%20hard%20to%20photograph%E2%80%A6%3C/p%3E%3Cp%3ELast%20week%20I%20had%20the%20honour%20of%20co-hosting%20Angie%E2%80%99s%20Friday%20Fiesta%20%2315%20with%20the%20lovely%20Jhuls%20of%20Not%20So%20Creative%20Cook.%20Jhuls%20was%20SO%20much%20fun%20to%20host%20with%20even%20though%20I%20did%20have%20to%20start%20hiding%20some%20of%20the%20desserts%20from%20her!!%20I%20was%20blown%20away%20by%20not%20only%20all%20the%20creativity%20out%20there%20but%20also%20how%20everyone%20got%20into%20the%20spirit,%20warmly%20commenting%20on%20each%20other%E2%80%99s%20posts%20as%20they%20hopped%20from%20blog%20to%20blog%20visiting%20each%20other.%20This%20really%20is%20such%20a%20wonderful%20virtual%20community%20and%20I%20am%20delighted%20to%20be%20a%20part%20of%20this%20gang!%3C/p%3E%3Cp%3EThis%20week%20Elaine%20of%20foodbod%20and%20Stacey%20of%2010%20Legs%20in%20the%20Kitchen%20are%20co-hosting%20Angie%E2%80%99s%20Friday%20Fiesta%20%2316%20%20-%20do%20check%20out%20their%20blogs%20if%20you%20haven%E2%80%99t%20already.%20Both%20of%20them%20have%20very%20different%20writing%20styles%20and%20interests%20in%20food.%3C/p%3E%3Cp%3ETo%20help%20cool%20things%20down%20(coz%20it%E2%80%99s%20gonna%20be%20a%20scorcher!!)%20I%E2%80%99m%20bringing%20tubs%20and%20tubs%20of%20this%20Raspberry%20Swirl%20Vanilla%20Bean%20Ice%20Cream%20with%20Fino%20Sherry%20to%20Angies%20Fiesta%20Friday%20%2316.%20%20So,%20don%E2%80%99t%20be%20shy%20%E2%80%93%20visit%20as%20many%20of%20the%20blogs%20as%20you%20can,%20follow%20the%20ones%20that%20are%20new%20to%20you,%20leave%20comments%20and%20tuck%20in!!%3C/p%3E%3Cp%3ENo-churn%20Raspberry%20Swirl%20Vanilla%20Bean%20Ice%20Cream%20with%20Fino%20Sherry%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3EINSTRUCTIONS%3C/p%3E%3Cp%3EPick%20over%20the%20raspberries%20and%20discard%20any%20that%20are%20mouldy.%20Place%20on%20a%20medium-low%20heat,%20in%20a%20heavy%20bottomed%20saucepan%20with%20the%20sugar%20and%20cinnamon.%20Stir,%20allowing%20it%20to%20cook%20down%20to%20a%20thick%20syrupy%20mass%20%E2%80%93%20about%205%20to%208%20minutes.%20Turn%20off%20the%20heat%20and%20allow%20to%20cool%20down.%20You%20can%20sieve%20out%20the%20seeds%20but%20I%20didn%E2%80%99t%20bother.%3C/p%3E%3Cp%3EPut%20the%20double%20cream%20in%20a%20mixing%20bowl%20and%20beat%20with%20an%20electric%20mixer%20until%20it%20thickens.%20Scrape%20out%20seeds%20from%20the%20vanilla%20bean%20as%20well%20as%20the%20contents%20of%20the%20tin%20of%20condensed%20milk%20into%20the%20mixing%20bowl.%20Beat%20for%202%20or%203%20minutes,%20then%20add%20the%20fino%20sherry%20and%20beat%20to%20incorporate.%3C/p%3E%3Cp%3EPour%20the%20mix%20into%20a%20500%20ml%20freezer%20proof%20container%20and%20place%20in%20the%20freezer%20for%20about%20an%20hour%20or%20so.%3C/p%3E%3Cp%3ERemove%20from%20the%20freezer%20and%20top%20with%20half%20of%20the%20compote.%20Mix%20it%20in%20gently%20and%20not%20too%20thoroughly%20as%20you%20are%20aiming%20for%20swirls%20rather%20than%20amalgamation.%20Replace%20in%20the%20freezer%20and%20freeze%20for%20another%204%20or%205%20hours.%3C/p%3E%3Cp%3EIf%20it%20has%20been%20in%20the%20freezer%20overnight%20remove%2010%20minutes%20or%20so%20before%20serving.%3C/p%3E%3Cp%3EServe%20topped%20with%20more%20raspberry%20coulis.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
