.%20After%20all%20the%20%22We%20are%20Boston%20hear%20us%20Roar%22,%20and%20Neil%20Diamond%20singing,%20some%20dickwad%20ripped%20us%20off.%20So%20much%20for%20warm%20fuzzy%20feelings.%3C/p%3E%3Cp%3EDespite%20the%20theft,%20we%20had%20a%20really%20fun%20time.%20What%20else%20has%20been%20happening%20in%20the%20last%20month%20that%20I%20have%20been%20too%20busy%20or%20too%20lazy%20to%20blog?%20Well,%20here%20is%20the%20conversation%20in%20my%20head%20about%20blogging%3C/p%3E%3Cp%3EJanis:%20I%20should%20blog%20something.%20Nevermind%20that%20I%20haven't%20cooked%20in%20a%20month,%20and%20we%20have%20been%20surviving%20on%20some%20really%20bad%20shit%20like%20Rice%20a%20roni%20and%20other%20boxed%20foods....%20I%20could%20make%20stuff%20up%20to%20blog.%20No%20one%20will%20be%20the%20wiser.%3C/p%3E%3Cp%3EHead:%20No%20one%20wants%20to%20read%20that%20shit.%3C/p%3E%3Cp%3EJanis:%20I%20will%20talk%20about%20myself.%20How%20uninteresting%20can%20THAT%20be?%3C/p%3E%3Cp%3EHead:%20Very.%20Give%20up%20and%20just%20pretend%20you%20don't%20have%20a%20blog.%3C/p%3E%3Cp%3EJanis:%20Yeah,%20I%20think%20you%20have%20a%20point.%3C/p%3E%3Cp%3EWhat%20else%20has%20been%20happening?%20(afterall%20I%20get%20to%20talk%20all%20about%20me%20me%20me%20on%20my%20blog)%3C/p%3E%3Cp%3EDr.%20Food%20forgot%20his%20wallet%20at%20breakfast%20and%20I%20didn't%20have%20my%20purse%20with%20me.%20He%20left%20me%20at%20the%20table%20as%20collateral%20(oy)%20and%20went%20home.%20I%20drank%20boatloads%20of%20coffee%20until%20he%20got%20back.%20By%20this%20time%20I%20was%20shaking%20from%20a%20caffeine%20rush%20and%20was%20talking%20really%20fast.%20We%20went%20to%20Target%20and%20I%20got%20over%20it.%3C/p%3E%3Cp%3EMy%20friend%20Cathy%20made%20me%20go%20walking.%20I%20hate%20exercise%20but%20she%20yelled%20at%20me%20and%20got%20me%20to%20go.%20I%20love%20her%20for%20the%20encouragement%20(but%20I%20still%20hate%20exercise).%20We%20saw%20Turkeys.%20I%20illustrated%20where%20the%20turkey%20was%20in%20case%20you%20aren't%20too%20observant.%3C/p%3E%3Cp%3EI%20had%20some%20beef%20shanks%20in%20the%20freezer.%20I%20never%20have%20made%20them%20before.%20I%20looked%20up%20a%20recipe%20and%20found%20one%20that%20sounded%20good.%20It%20was%20Portuguese%20Braised%20Beef%20Shanks.%20So%20good%20and%20not%20difficult%20at%20all.%3C/p%3E%3Cp%3EI%20knew%20that%20the%20dog%20and%20Dr.%20Food%20would%20love%20the%20marrow.%20Wait,%20did%20that%20sound%20bad%20putting%20the%20dog%20and%20Dr.%20Food%20in%20the%20same%20category.%20I%20didn't%20mean%20it%20that%20way...%3C/p%3E%3Cp%3EThe%20dog%20put%20this%20recipe%20in%20her%20favorites%20list.%20Dr.%20Food%20liked%20it%20too.%3C/p%3E%3Cp%3EPortuguese%20Braised%20Beef%20Shanks%20Recipe%3C/p%3E%3Cp%3Eby%20Karen%20Calanchini,%20Food%20Stylist%20and%20Photographer,%20of%20Redding,%20CA%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%20Position%20oven%20rack%20in%20lower%20third%20of%20oven.%3C/p%3E%3Cp%3EPlace%20the%20peppercorns,%20allspice,%20cloves,%20cinnamon,%20and%20bay%20leaves%20into%20a%20cheesecloth%20pouch;%20tie%20securely%20and%20set%20aside.%3C/p%3E%3Cp%3EHeat%20a%20large%20oven-proof%20pot%20with%20a%20tight-fitting%20lid%20over%20medium-low%20heat%20until%20hot.%20Add%20the%20pancetta%20cubes%20and%20sizzle%20to%20render%20the%20fat%20and%20crisp%20up.%20When%20crispy,%20remove%20with%20a%20slotted%20spoon%20to%20a%20folded%20paper%20towel;%20set%20aside.%3C/p%3E%3Cp%3EPlace%20the%20beef%20shanks%20into%20the%20hot%20rendered%20fat.%20Sprinkle%20salt%20and%20pepper%20over%20the%20top%20of%20each%20beef%20shank%20and%20sear%20until%20very%20brown%20(this%20step%20gives%20the%20dish%20more%20flavor).%20Turn%20the%20beef%20shanks%20and%20sear%20the%20other%20side.%20Sprinkle%20salt%20and%20pepper%20over%20the%20browned%20side.%20Once%20both%20sides%20are%20well%20seared,%20remove%20the%20beef%20shanks%20to%20a%20plate;%20set%20aside.%3C/p%3E%3Cp%3ELower%20heat%20to%20low%20(if%20the%20pot%20is%20dry,%20add%20a%20little%20olive%20oil).%20Add%20the%20onions,%20stirring%20until%20they%20begin%20to%20release%20their%20water.%20Using%20your%20spatula,%20scrape%20up%20the%20browned%20bits%20on%20the%20bottom%20of%20the%20pan%20and%20stir%20into%20the%20onions.%20Saut%C3%A9%20the%20onions%20until%20softened.%20Add%20the%20garlic%20and%20saut%C3%A9%20an%20additional%201%20minute.%3C/p%3E%3Cp%3EAdd%20the%20beef%20stock,%20wine,%20molasses,%20and%201%20teaspoon%20salt%20to%20the%20pot.%20Turn%20off%20the%20heat,%20add%20the%20prepared%20pancetta,%20beef%20shanks,%20and%20any%20accumulated%20juices%20to%20the%20pot.%20Nestle%20the%20cheesecloth%20spice%20pouch%20and%20the%20chile%20peppers%20in%20the%20pot.%20Cover%20and%20braise%20the%20beef%20in%20the%20oven,%20for%20approximately%204%20hours,%20turning%20once%20and%20using%20a%20spoon,%20scoop%20up%20the%20juices%20and%20the%20onions%20and%20pour%20over%20the%20top%20of%20the%20shanks.%20Meat%20should%20be%20falling%20off%20the%20bone%20when%20done.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20transfer%20the%20beef%20shanks%20to%20a%20serving%20platter,%20along%20with%20the%20bones%20(the%20marrow%20in%20the%20bone%20is%20excellent%20and%20some%20people%20love%20to%20eat%20it).%20Remove%20the%20cheesecloth%20spice%20pouch%20and%20peppers%20(unless%20you%20want%20to%20eat%20the%20peppers).%3C/p%3E%3Cp%3EAt%20this%20point,%20the%20juice%20may%20be%20reduced,%20if%20necessary,%20by%20cooking%20over%20high%20heat%20to%20the%20obtain%20the%20consistency%20or%20thickness%20you%20desire.%20Skim%20fat%20from%20the%20top,%20taste,%20and%20season%20with%20salt%20and%20pepper%20if%20needed.%3C/p%3E%3Cp%3EDivided%20meat%20and%20bones%20(with%20marrow)%20onto%204%20plates%20and%20ladle%20the%20sauce%20on%20top.%3C/p%3E%3Cp%3EMakes%204%20servings.%3C/p%3E){kind=link}
