%20are%20another%20story.%20%20Last%20spring%20when%20we%20moved%20in,%20I%20noticed%20them%20blooming.%20%20Is%20there%20nothing%20better%20than%20the%20smell%20of%20citrus%20blossoms?%20%20Still,%20I%20thought,%20these%20trees%20are%20in%20such%20bad%20shape.%20%20Then%20this%20happened.%3C/p%3E%3Cp%3EAnd%20my%20dad,%20who%20has%20coached%20me%20along%20with%20my%20trees%20(he%20has%203%20of%20his%20own),%20told%20me%20%22you%20won't%20realize%20just%20how%20much%20fruit%20you%20have%20until%20they%20ripen.%22%3C/p%3E%3Cp%3EI%20thought,%20%22OK,%20crazy%20man.%20%20Whatever%20you%20say.%20%20I%20can%20see%20the%20fruit,%20you%20know.%22%3C/p%3E%3Cp%3EBut%20then%20orange%20started%20popping%20against%20the%20green%20leaves%20and%20I%20quickly%20realized%20what%20he%20meant.%20%20The%20green%20fruit%20blends%20in%20so%20well.%20%20But%20when%20they%20ripen...%3C/p%3E%3Cp%3EWell,%20I%20knew%20I%20had%20a%20huge%20%22problem%22%20on%20my%20hands.%20%20What%20was%20I%20going%20to%20do%20with%20all%20of%20this%20fruit?%3C/p%3E%3Cp%3EOne%20thing%20was%20for%20sure.%20%20No%20scurvy%20dogs%20here.%3C/p%3E%3Cp%3EI%20bagged%20up%20pounds%20and%20pounds%20to%20give%20to%20friends.%20%20Co-workers.%20%20The%20Boy's%20fiddle%20teacher.%20%20Random%20people%20on%20the%20street.%20%20I'd%20rather%20be%20thought%20of%20as%20crazy%20than%20for%20food%20to%20go%20to%20waste.%3C/p%3E%3Cp%3EI%20searched%20for%20something%20to%20do%20with%20the%20fruit%20so%20we%20wouldn't%20get%20bored.%20%20Satsuma%20Buttermilk%20Pie%20jumped%20out%20at%20me%20from%20one%20of%20my%20favorite%20chefs%20and%20cookbooks:%20Real%20Cajun%20by%20Donald%20Link.%20%20I%20was%20excited!%20%20Eager%20for%20the%20fruit%20to%20be%20ripe%20enough!%20%20I%20just%20knew%20my%20problem%20was%20solved!%3C/p%3E%3Cp%3EUntil%20I%20set%20about%20making%20the%20pie%20several%20weeks%20later%20and%20realized%20that%20one%20pie%20would%20only%20use%20a%20few%20satsumas.%3C/p%3E%3Cp%3EWhoooosh.%20%20Oh.%20%20Did%20you%20hear%20that?%20%20That%20was%20the%20wind.%20%20Sucked%20from%20my%20sails.%3C/p%3E%3Cp%3EBut%20the%20pie%20was%20good.%20%20Really%20good.%20%20I%20made...um...let's%20say%20several.%20%20And%20I'm%20not%20big%20on%20fruity%20dessert.%3C/p%3E%3Cp%3EYou'll%20need:%3C/p%3E%3Cp%3Esugar,%20flour,%20eggs,%20butter,%20buttermilk,%20vanilla,%20satsuma%20zest%20and%20juice,%20graham%20cracker%20pie%20crust%3C/p%3E%3Cp%3EVery%20easy.%20%20Whisk%20the%20sugar%20and%20flour,%20add%20eggs%20one%20at%20a%20time.%20%20Whisk%20in%20everything%20else.%20%20Pour%20into%20a%20prebaked%20pie%20shell%20and%20bake.%3C/p%3E%3Cp%3ESatsumas...Those%20four%20little%20puppies%20up%20there%20are%20satsumas.%20%20Sweet,%20juicy%20satsumas.%20%20The%20belle%20of%20the%20ball%20when%20it%20comes%20to%20citrus%20in%20South%20Louisiana.%20%20Easy%20to%20peel%20because%20of%20their%20loose%20skin.%20%20Seedless%20or%20almost%20nearly%20so.%20%20And%20they%20come%20apart%20in%20neat,%20perfect%20segments.%20%20They%20are%20Japanese%20in%20origin%20and%20related%20to%20mandarin%20oranges.%20%20Jesuits%20brought%20satsumas%20from%20Japan%20to%20Louisiana%20in%20the%2018th%20century,%20planting%20groves%20in%20Plaquemines%20Parish,%20south%20of%20New%20Orleans.%20%20Hundreds%20of%20acres%20are%20still%20grown%20in%20Plaquemines%20Parish.%20%20And%20many%20backyards%20around%20Louisiana%20(and%20Texas%20through%20Florida)%20have%20a%20tree%20or%20two.%3C/p%3E%3Cp%3EI%20opted%20to%20also%20make%20Link's%20homemade%20graham%20cracker%20crust.%20%20It's%20not%20difficult%20and%20has%20good%20flavor.%20%20But%20my%20oven%20is...well...mischievous.%20%20(Yeah,%20sure.%20%20Blame%20the%20oven.)%20%20No%20matter%20what%20I%20set%20it%20to,%20part%20way%20into%20cooking%20it%20decides%20450%20is%20really%20the%20way%20to%20go.%20%20I%20had%20some%20problems%20with%20over%20baked%20crust,%20but%20not%20because%20of%20the%20recipe.%3C/p%3E%3Cp%3ESatsuma%20Buttermilk%20Pie%3C/p%3E%3Cp%3Efrom%20Real%20Cajun%20by%20Donald%20Link%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl%20or%20the%20bowl%20of%20an%20electric%20mixer,%20cream%20the%20butter%20and%20sugars.%20%20Add%20the%20honey,%20flours,%20salt,%20and%20cinnamon,%20and%20stir%20until%20just%20combined.%20%20Refrigerate%20the%20dough%20for%20at%20least%202%20hours%20or%20up%20to%201%20day%20in%20advance.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325.%20%20Use%20your%20hands%20to%20press%20the%20dough%20into%20a%209%20or%2010%22%20pie%20pan.%20%20Bake%20about%2030%20minutes,%20or%20until%20lightly%20browned.%20%20Cool%20completely%20before%20filling.%3C/p%3E%3Cp%3EThis%20is%20my%20entry%20for%20Garden%20Variety%20Wednesday.%20%20Please%20join%20in%20by%20linking%20up%20a%20recipe%20or%20idea%20using%20fresh%20produce.%3C/p%3E%3Cp%3EBecause%20growing%20seasons%20vary,%20old/archived%20posts%20are%20welcome!%3C/p%3E%3Cp%3EAlso%20linking%20up%20this%20week%20with:%3C/p%3E%3Cp%3EThe%20first%20Sunday%20of%20every%20month%3C/p%3E%3Cp%3EAt%20Drick's%20R
