.%20Nopales,%20or%20cactus%20paddles:%3C/p%3E%3Cp%3EI%20have%20always%20loved%20the%20varied%20flavor%20profiles%20of%20Mexican%20cuisine,%20but%20since%20my%20visit%20to%20Mexico%20City,%20it's%20become%20one%20of%20my%20absolute%20favorite%20cuisines%20in%20the%20world,%20and%20I%20love%20trying%20my%20hand%20at%20Mexican%20dishes%20whenever%20I%20can.%20Nopales%20are%20a%20common%20ingredient%20there%20and%20easily%20found,%20and%20I'm%20lucky%20that%20my%20local%20Mexican%20grocery%20carries%20them%20-%20with%20the%20thorns%20already%20removed!%20They%20taste%20a%20bit%20like%20a%20cross%20between%20%20green%20beans%20and%20asparagus,%20with%20a%20bit%20of%20a%20lemon-y%20overtone.%3C/p%3E%3Cp%3EI%20decided%20I'd%20make%20a%20salsa%20verde,%20pickled%20nopales,%20and%20nopales%20quesadillas%20with%20habenero%20jack%20and%20queso%20fresco.%20As%20I%20made%20my%20quesadillas%20very%20cheesy%20they%20are%20actually%20more%20Tex%20Mex%20than%20authentically%20Mexican.%20But%20very%20good%20nonetheless!%3C/p%3E%3Cp%3ELike%20okra,%20nopales%20have%20a%20bit%20of%20a%20slime%20issue.%20There%20are%20different%20ways%20to%20deal%20with%20that,%20and%20I%20used%20a%20different%20method%20with%20each%20of%20my%20dish's%20components.%3C/p%3E%3Cp%3EFor%20the%20pickled%20nopales,%20I%20cut%20one%20cactus%20paddle%20into%20strips%20and%20covered%20it%20in%20salt%20for%20about%20an%20hour%20%20to%20draw%20out%20the%20slime.%20For%20the%20salsa%20verde,%20I%20roasted%20the%20paddles%20whole,%20and%20for%20the%20quesadillas%20I%20boiled%20chopped%20nopales%20and%20then%20rinsed%20them%20several%20times.%20The%20boiling%20method%20worked%20best%20at%20eradicating%20slime,%20but%20none%20of%20the%20dishes%20were%20what%20I%20would%20consider%20off-puttingly%20slimy.%3C/p%3E%3Cp%3ELook%20Ma,%20no%20slime!%3C/p%3E%3Cp%3EFor%20the%20pickled%20nopales%20(do%20this%20step%20first):%20Salt%20and%20rinse%20a%20cactus%20paddle%20as%20described%20above.%20Chop%20and%20place%20in%20a%20heatproof%20glass%20container%20along%20with%201/2%20chopped%20red%20onion%20and%20one%20habanero%20pepper%20that's%20been%20cut%20in%20half.%20%20Add%20a%20pinch%20of%20salt.%20Heat%201/2%20cup%20red%20wine%20vinegar%20and%202%20tablespoons%20sugar%20and%20pour%20over%20the%20cactus%20and%20onions.%20Let%20sit%20at%20room%20temperature%20for%20several%20hours.%3C/p%3E%3Cp%3EFor%20the%20salsa%20verde:%20Over%20the%20flame%20of%20your%20gas%20stove,%20roast%20one%20Poblano%20pepper,%20one%20jalapeno,%20and%20one%20Serrano%20pepper%20until%20black.%20Meanwhile,%20in%20the%20oven%20at%20400%20F,%20roast%205%20tomatillos,%201/2%20white%20onion,%20and%202%20salted%20cactus%20paddles%20until%20the%20tomatillos%20split.%20Peel%20the%20blackened%20peppers,%20give%20everything%20a%20rough%20chop%20and%20%20and%20whizz%20it%20all%20together%20to%20a%20chunky%20texture%20with%20an%20immersion%20blender,%20along%20with%20a%20handful%20of%20cilantro,%20a%20squeeze%20of%20lime,%20and%20salt%20to%20taste.%20Refrigerate.%3C/p%3E%3Cp%3EFor%20the%20quesadillas,%20boil%20chopped%20nopales%20and%20rinse.%20On%20a%20corn%20tortilla%20layer%20refried%20beans,%20shredded%20habanero%20jack%20cheese%20and%20the%20nopales.%20Top%20with%20a%20corn%20tortilla%20and%20fry%20on%20a%20hot%20skillet%20until%20the%20cheese%20melts.%20Garnish%20with%20queso%20fresco,%20salsa%20verde,%20and%20pickled%20nopales.%3C/p%3E%3Cp%3EAnd%20then%20enjoy%20the%20spicy%20goodness.%3C/p%3E%3Cp%3EWant%20to%20see%20%20the%20amazing%20creations%20the%20other%20Crew%20members%20have%20come%20with?%20Make%20sure%20to%20visit%20Lazaro's%20round%20up%20on%20August%2029.%20But%20don't%20worry,%20I%20will%20remind%20you%20if%20you%20forget!%3C/p%3E){kind=link}
