Receta Nopi’s Lamb Meatballs with Warm Yogurt and Swiss Chard
Ingredientes
- 2 1/4 pounds ground lamb
- 5 1/4 ounces fresh bread crumbs
- 2 1/2 ounces pine nuts, toasted
- 1 teaspoon ground cinnamon
- 2 teaspoons ground coriander
- 1/2 teaspoon dried mint
- 4 teaspoons ground allspice
- 4 cloves garlic, crushed
- 1/4 cup olive oil
- 1 medium onion, finely chopped
- 1 red chile, seeded and finely diced
- 10 1/2 ounces (about 1 bunch) Swiss chard, white stalks removed (and saved for another use) and green leaves coarsely shredded
- 1 1/4 cups chicken stock
- 2 1/2 tablespoons lemon juice
- 2 1/4 cups whole milk Greek yogurt
- 1 tablespoon cornstarch, mixed to a paste with 2 teaspoons water
- 1 egg, lightly beaten
- Seeds of 1 medium pomegranate (optional)
- 3/4 ounce cilantro leaves, coarsely chopped
