Ingredientes

  • 2 x tart apples, peeled, cored, and cut into 1/2 inch dice
  • 1 tsp extra virgin olive oil
  • 2 x apricots, pitted, poached, in 1/2 inch dice Or possibly use canned unsweetened
  •     apricots
  • 2 x artichoke bottoms, cooked, cut into 1/2 inch dice
  • 2 x Large eggs
  • 3/4 c. lowfat milk
  • 1 1/2 tsp salt
  •     Healthy pinch of pepper
  •     Freshly grated nutmeg
  •     Preheat oven to 425 degrees.

Direcciones

  1. In a heavy saucepan, cook apples in extra virgin olive oil for 4 min, still a little hard. Add in apricots and artichoke; cook 2 more min.
  2. To prepare custard: In a bowl, beat Large eggs. Add in remaining ingredients.
  3. Put cooked fruit and artichokes in bottom of 4 individual baking dishes with an inside diameter of 6 inches. Cover with custard mix. Bake for 15 min.
  4. The gratin resembles clafouti, a fruit and custard dessert, but is savory, not sweet.
