- In a heavy saucepan, cook apples in extra virgin olive oil for 4 min, still a little hard. Add in apricots and artichoke; cook 2 more min.
- To prepare custard: In a bowl, beat Large eggs. Add in remaining ingredients.
- Put cooked fruit and artichokes in bottom of 4 individual baking dishes with an inside diameter of 6 inches. Cover with custard mix. Bake for 15 min.
- The gratin resembles clafouti, a fruit and custard dessert, but is savory, not sweet.
