- based on the Homesick Texanâs Peanut Butter Pie
- 1 9-inch uncooked pie crust
- 2 egg yolks, beaten slightly
- 1 1/2 c. whole milk
- 3/4 c. sugar
- 5 T. flour
- 1/4 t. fine sea salt
- ¾ c. Nutella
- 1 c. sweetened coconut
- 1/2 t. pure vanilla
- 1/8 t. ground cinnamon
- 1/8 t. cayenne
- 2 egg whites
- 1/8 teaspoon of salt
- 1/4 t. cream of tartar
- 4 tablespoons of sugar

%3C/p%3E%3Cp%3EWhen%20she%20visits%20during%20this%20time%20of%20year,%20she%20also%20loads%20up%20her%20vehicle%20(which%20we%20call%20Gran%E2%80%99s%20Truckster)%20with%20lots%20of%20produce%20from%20her%20garden.%20%20%20She%20brought%20us%20%20%E2%80%9Call%20the%20tomatoes%20I%20could%20handle,%20loads%20of%20green%20beans,%20and%20squash.%E2%80%9D%20%20%20%20With%20mom%E2%80%99s%20help,%20we%20will%20preserve%20some%20of%20this%20Iowa%20bounty%20for%20later%20eating%20this%20winter.%3C/p%3E%3Cp%3EBefore%20mom%20arrived,%20I%20decided%20to%20use%20up%20the%20final%20pie%20crust%20and%20make%20a%20pie.%20%20%20I%20haven%E2%80%99t%20made%20dessert%20in%20a%20really%20long%20time%20for%20us%20so%20a%20pie%20was%20needed.%3C/p%3E%3Cp%3EI%20recently%20posted%20my%20latest%20Food%20%E2%80%98n%20Flix%20post%20over%20The%20Help%20and%20I%20was%20tempted%20to%20make%20a%20chocolate%20pie%20for%20that%20post%20but%20I%20really%20couldn%E2%80%99t%20go%20there.%20%20%20%20%20%20I%20decided%20to%20make%20a%20Nutella%20pie%20to%20use%20up%20this%20final%20pie%20crust,%20but%20when%20I%20went%20to%20find%20a%20recipe,%20most%20all%20had%20either%20corn%20syrup%20or%20Cool-Whip%20as%20a%20major%20ingredient.%20%20That%20just%20didn%E2%80%99t%20sound%20good%20to%20me.%3C/p%3E%3Cp%3ELuckily,%20I%20found%20a%20great%20sounding%20Peanut%20Butter%20Pie%20at%20Homesick%20Texan.%20%20%20It%20was%20a%20cooked%20pudding%20based%20pie%20and%20I%20thought%20it%20sounded%20fabulous.%20%20I%20went%20about%20adapting%20it%20and%20this%20is%20what%20I%20came%20up%20with.%3C/p%3E%3Cp%3EPrick%20holes%20in%20the%20pie%20crust%20with%20a%20fork%20and%20bake%20it%20at%20350%20until%20it%E2%80%99s%20brown,%20about%2020%20minutes.%3C/p%3E%3Cp%3EIn%20a%20medium%20mixing%20bowl,%20whisk%20together%20the%20eggs,%20milk,%20sugar,%20flour%20and%20salt.%20%20%20%20%20After%20ingredients%20are%20mixed%20well,%20pour%20into%20a%20heavy%20sauce%20pan.%20%20%20%20Continue%20to%20whisk%20while%20cooking%20over%20medium%20heat%20until%20it%20bubbles%20and%20thickens,%20about%20five%20to%2010%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20stir%20in%20the%20Nutella,%20coconut,%20cinnamon,%20%20and%20cayenne.%3C/p%3E%3Cp%3ESet%20aside.%3C/p%3E%3Cp%3EBeat%20egg%20whites%20with%20salt%20and%20cream%20of%20tartar.%20%20%20%20When%20they%20start%20to%20get%20fluffy,%20sprinkle%20in%20the%20sugar.%20Beat%20until%20stiff%20peaks%20form.%3C/p%3E%3Cp%3EPour%20the%20Nutella%20mixture%20%20into%20the%20baked%20pie%20shell.%3C/p%3E%3Cp%3ETop%20with%20the%20meringue.%20%20%20%20Sprinkle%20a%20bit%20more%20coconut%20on%20top%20of%20the%20meringue.%3C/p%3E%3Cp%3EBake%20pie%20until%20peaks%20on%20the%20meringue%20and%20coconut%20are%20lightly%20browned,%20about%2010%20minutes.%3C/p%3E%3Cp%3EThe%20cayenne%20just%20adds%20a%20little%20back%20heat%20(ever%20so%20slight)%20and%20the%20cinnamon%20reminds%20me%20of%20Mexican%20hot%20chocolate.%20%20%20%20I%20hate%20to%20brag,%20but%20this%20might%20be%20the%20best%20pie%20ever%E2%80%94but%20only%20with%20Mom%E2%80%99s%20pie%20crusts%20can%20it%20be%20a%20reality!%3C/p%3E%3Cp%3EForgot%20to%20take%20a%20pic%20until%20we%20had%20eaten%20a%20good%20deal%20of%20it.%3C/p%3E%3Cp%3EPostscript:%3C/p%3E%3Cp%3ESo%20when%20mom%20was%20here,%20we%20needed%20a%20birthday%20cake.%20%20%20She%20requested%20a%20Pineapple%20Upside-Down%20Cake%20but%20The%20Hubs%20stepped%20in%20and%20talked%20her%20into%20another%20Nutella%20Pie.%20%20%20%20For%20the%20second%20pie,%20I%20used%20a%20tart%20shell%20(made%20by%20mom)%20and%20I%20did%20not%20have%20enough%20Nutella%20so%20I%20supplemented%20with%20some%20organic%20peanut%20butter.%20%20%20%20%20I%20also%20didn%E2%80%99t%20have%20enough%20coconut%20to%20put%20on%20top%20so%20I%20made%20some%20beautiful%20peaks%20with%20the%20meringue.%3C/p%3E%3Cp%3EThis%20may%20be%20the%20best%20meringue%20I%20have%20ever%20made.%3C/p%3E%3Cp%3EHow%E2%80%99s%20this%20for%20a%20birthday%20pie?%3C/p%3E%3Cp%3EHappy%20Birthday,%20Mom!%20(Like%20the%20recycled%20race%20car%20from%20a%20nephew%E2%80%99s%20b-day?)%3C/p%3E){kind=link}
