%20so%20I%20could%20have%20a%20chance%20at%20tasting%20it%20myself.%3C/p%3E%3Cp%3EThe%20challenge%20this%20month%20was%20crisp%20crackers%20and%20flatbreads,%20with%20the%20chance%20to%20get%20creative%20and%20use%20any%20recipe%20we'd%20like,%20as%20long%20as%20the%20result%20was%20something%20hard%20and%20crispy.%20%20I'd%20originally%20set%20my%20sights%20on%20making%20Raincoast%20Crisps,%20but%20the%20ingredients%20list%20was%20long%20and%20besides,%20I've%20had%20this%20recipe%20bookmarked%20for%20a%20really,%20really%20long%20time.%3C/p%3E%3Cp%3EThis%20is%20sort%20of%20like%20an%20egg-whites%20only%20biscotti.%20%20Unlike%20traditional%20biscotti,%20they're%20far%20thinner,%20more%20like%20a%20cracker%20than%20a%20thick%20biscotti,%20and%20goes%20perfectly%20with%20coffee%20or%20tea.%20%20As%20an%20added%20bonus,%20this%20recipe%20is%20ridiculously%20healthy%20-%20egg%20whites,%20flour,%20sugar%20and%20nuts%20are%20its%20main%20ingredients.%3C/p%3E%3Cp%3EThe%20only%20slightly%20difficult%20thing%20about%20this%20recipe%20was%20the%20slicing%20of%20the%20actual%20cookie%20-%20but%20truthfully,%20it%20wasn't%20as%20hard%20as%20I%20expected.%20%20Leaving%20it%20in%20the%20freezer%20actually%20softens%20it%20a%20little.%20%20Granted,%20I%20didn't%20slice%20as%20thinly%20as%20I%20would%20have%20liked%20them%20to%20be%20(I'd%20like%20to%20keep%20all%20my%20fingers%20and%20my%20knife%20skills%20aren't%20that%20good),%20but%20they%20still%20crisped%20up%20beautifully.%20%20The%20thinner%20you%20slice,%20the%20crisper%20they%20will%20turn%20out%20to%20be.%3C/p%3E%3Cp%3EWhat%20drew%20me%20to%20this%20recipe%20was%20the%20fact%20that%20it%20used%20rice%20flour.%20I've%20used%20rice%20flour%20in%20cookies%20before%20and%20the%20result%20was%20a%20very%20soft%20and%20crumbly%20cookie,%20so%20I%20was%20curious%20to%20see%20its%20effect%20here.%20I%20don't%20think%20its%20made%20a%20difference%20on%20the%20texture%20-%20no%20worries,%20still%20crisp%20and%20crunchy,%20I%20haven't%20violated%20the%20rules!%20-%20but%20I%20think%20it%20made%20the%20slices%20stick%20together%20a%20little%20better,%20made%20the%20mixture%20a%20bit%20more%20cohesive.%3C/p%3E%3Cp%3EDespite%20the%20fact%20I've%20wanted%20to%20make%20this%20for%20ages,%20I%20did%20make%20some%20changes.%20%20The%20original%20recipe%20called%20for%20a%20mixture%20of%20nuts%20-%20pistachios,%20walnuts%20and%20almonds,%20along%20with%20the%20addition%20of%20candied%20ginger.%20%20While%20I%20think%20all%20of%20those%20together%20in%20a%20slice%20would%20taste%20pretty%20amazing,%20I%20was%20in%20the%20mood%20for%20something%20simpler,%20and%20I%20also%20wanted%20to%20make%20something%20similar%20to%20this,%20so%20I%20stuck%20with%20almonds%20and%20pistachios.%3C/p%3E%3Cp%3EI%20love%20these%20slices.%20%20Thanks%20Sarah%20for%20a%20great%20challenge!%3C/p%3E%3Cp%3ENutty%20Biscuit%20Slices%3C/p%3E%3Cp%3EAdapted%20from%20Joy%20of%20Making%20Cookies%20by%20Alex%20Goh%3C/p%3E%3Cp%3EMakes%20about%202%20dozen%20slices%3C/p%3E%3Cp%3ENote:%20The%20original%20recipe%20made%20double%20this%20amount;%20I%20only%20had%20one%20loaf%20tin%20so%20I%20halved%20it.%20Half%20of%20this%20recipe%20already%20makes%20quite%20a%20decent%20amount%20of%20slices.%20%20However,%20if%20you'd%20like%20to%20make%20more,%20just%20double%20the%20recipe%20below.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20175C/347F.%20%20Line%20a%207inch%20x%203inch%20loaf%20tin%20with%20baking%20paper.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20the%20egg%20whites%20with%20sugar%20and%20salt%20until%20stiff.%20%20Sift%20the%20flours%20into%20the%20egg%20whites%20mixture%20and%20combine%20well.%20%20Fold%20in%20the%20nuts.%3C/p%3E%3Cp%3EPour%20the%20mixture%20into%20the%20loaf%20tin%20and%20smooth%20the%20top.%20%20Bake%20for%2040%20minutes%20or%20until%20the%20top%20is%20golden.%3C/p%3E%3Cp%3ELet%20the%20loaf%20cool%20on%20a%20rack,%20then%20wrap%20it%20up%20and%20place%20it%20in%20the%20freezer%20for%206%20hours%20or%20more.%3C/p%3E%3Cp%3EWhen%20it's%20ready,%20preheat%20the%20oven%20to%20150C/300F.%20%20Take%20the%20loaf%20out%20of%20the%20freezer%20and%20slice%20into%20pieces%20about%202mm%20thick.%20%20Lay%20the%20slices%20on%20a%20baking%20sheet%20and%20bake%20for%20about%2015%20minutes,%20or%20until%20hard%20and%20crispy.%20%20Let%20cool%20and%20enjoy.%20%20Store%20at%20room%20temperature%20in%20an%20airtight%20container%20for%20up%20to%20a%20week.%3C/p%3E){kind=link}
