,%20and%20one%20of%20my%20cousins,%20who%20I%20have%20publicly%20stated%20amongst%20my%20family%20far%20too%20often%20has%20always%20been%20my%20favorite.%3C/p%3E%3Cp%3EI%E2%80%99m%20so%20excited%20to%20see%20this%20special%20group%20of%20people.%20And%20to%20go%20almost%20straight%20from%20the%20airport%20to%20a%20hot%20springs%20resort.%20As%20a%20woman%20who%20takes%20a%20long,%20hot%20bath%20almost%20daily,%20I%E2%80%99m%20a%20bit%20giddy%20at%20the%20idea%20of%20sinking%20into%20steaming%20springs%20whilst%20being%20surrounded%20by%20snow!%3C/p%3E%3Cp%3EOn%20her%20last%20trip%20out,%20Marcia%20and%20I%20went%20to%20dinner%20downtown%20at%20Risotteria,%20which%20has%20gluten-free%20bread%20and%20risotto%20and%20sweets%20galore.%20She%20loved%20their%20gluten-free%20Raspberry%20Linzer%20cookies%20so%20much%20she%20took%20half%20a%20dozen%20home%20with%20her.%20Since%20I%E2%80%99m%20not%20in%20that%20part%20of%20town%20often,%20I%20figured%20I%E2%80%99d%20just%20make%20my%20own.%3C/p%3E%3Cp%3EThis%20is%20not%20nearly%20the%20first%20batch%20of%20Linzers%20I%E2%80%99ve%20made,%20but%20it%E2%80%99s%20by%20far%20my%20favorite.%20They%20have%20a%20higher%20almond%20ratio%20than%20many%20recipes,%20so%20they%E2%80%99re%20particularly%20nutty%20and%20crisp.%20And%20with%20no%20baking%20powder%20or%20soda,%20they%20retain%20their%20shape%20well%20and%20are%20full%20of%20buttery%20perfection.%20A%20smidgen%20of%20lemon%20zest,%20cinnamon%20and%20vanilla%20extract%20add%20a%20bit%20of%20depth%20without%20overwhelming%20the%20simplicity%20of%20them.%20Altogether,%20they%E2%80%99re%20one%20of%20my%20favorite%20cookies;%20simple,%20classic,%20and%20truly%20delicious.%3C/p%3E%3Cp%3EI%20tried%20making%20some%20in%20festive%20little%20human%20shapes%20(like%20Gingerbread%20men),%20but%20the%20delicate%20nature%20of%20the%20cookie%20was%20too%20much%20for%20the%20detail%20of%20my%20cutters.%20In%20general,%20I%E2%80%99d%20say%20go%20with%20cutouts%20that%20are%20rather%20sturdy.%20They%20definitely%20won%E2%80%99t%20ship%20well,%20but%20will%20make%20a%20classy%20addition%20to%20a%20holiday%20cookie%20plate%20or%20hostess%20gift.%3C/p%3E%3Cp%3EOr%20for%20one%20of%20your%20very%20favorite%20people%20who%20happens%20to%20have%20Celiac%20disease.%20Because%20these%20cookies%20definitely%20don%E2%80%99t%20taste%20like%20they%E2%80%99re%20lacking%20in%20anything,%20and%20they%E2%80%99re%20overflowing%20with%20love.%3C/p%3E%3Cp%3EHappy%20Friday%20from%20the%20skies,%3C/p%3E%3Cp%3E-%20Jacqueline%20xoxo%3C/p%3E%3Cp%3E%7Bgluten-free%7D%20Raspberry%20Linzer%20Cookies%3C/p%3E%3Cp%3EMakes%20around%2020%204%E2%80%B3%20sandwich%20cookies%3C/p%3E%3Cp%3EThese%20cookies%20are%20rather%20easy%20to%20make,%20but%20they%20do%20take%20a%20bit%20of%20planning%20since%20they%20work%20and%20taste%20better%20with%20periods%20of%20refrigeration.%20Make%20sure%20to%20have%20your%20butter%20solidly%20at%20room%20temperature,%20don%E2%80%99t%20skimp%20on%20the%20creaming%20step,%20and%20work%20gingerly%20with%20the%20dough.%20Have%20no%20fear%20%E2%80%93%20it%20rolls%20well!%20Choose%20sturdy%20cookie%20cutters%20to%20minimize%20breaking%20when%20filled,%20and%20layer%20gently%20upon%20storing.%20They%E2%80%99ll%20keep%20for%20about%20a%20week%20refrigerated.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20all%20flours,%20gum,%20cinnamon%20and%20salt.%20In%20another%20small%20bowl,%20whisk%20together%20almond%20flour%20and%2050g%20of%20the%20sugar%20(1/4%20cup).%3C/p%3E%3Cp%3EWith%20a%20hand%20mixer%20or%20a%20standing%20mixer%20with%20the%20whisk%20attachment,%20beat%20butter%20and%20remaining%20100g%20(1/2%20cup)%20sugar%20on%20medium/high%20speed,%20until%20light%20and%20fluffy,%20about%203%20minutes.%20Add%20the%20egg%20yolks%20and%20vanilla,%20and%20beat%20on%20medium%20and%20then%20high%20speed%20for%20another%203%20minutes.%20The%20mixture%20should%20be%20pale%20and%20delightfully%20fluffy,%20and%20the%20sugar%20should%20be%20completely%20dissolved%20in%20the%20butter%20and%20eggs.%20Add%20flour,%20almond%20and%20lemon%20zest,%20and%20mix%20in%20on%20slow.%20It%20will%20start%20to%20look%20like%20there%E2%80%99s%20not%20enough%20moisture%20in%20the%20batter%20%E2%80%93%20there%20is!%20Just%20continue%20mixing,%20scraping%20the%20beater%20blades%20and%20the%20sides%20of%20the%20bowl%20as%20necessary,%20until%20it%20pulls%20together%20into%20a%20dough.%20It%E2%80%99s%20best%20to%20let%20the%20machine%20do%20this%20and%20not%20your%20hands.%3C/p%3E%3Cp%3EWhen%20the%20dough%20pulls%20together,%20divide%20in%20half,%20flatten%20each%20half%20into%20a%20disk,%20wrap%20in%20plastic%20wrap,%20and%20refrigerate%20for%20at%20least%20an%20hour%20(or%20up%20to%20two%20days).%20The%20dough%20will%20come%20out%20of%20the%20fridge%20rather%20hard,%20but%20will%20soften%20very%20quickly.%3C/p%3E%3Cp%3EWhen%20ready%20to%20bake,%20preheat%20oven%20to%20350%20degrees%20and%20line%20two%20large%20cookie%20sheets%20with%20parchment%20paper%20or%20Silpat.%20On%20a%20floured%20surface%20(I%20used%20wax%20paper%20on%20top%20of%20a%20cutting%20board,%20dusted%20with%20white%20rice%20flour),%20roll%20out%20one%20disk%20until%20it%E2%80%99s%20about%201/4%E2%80%B3%20thick.%20Cut%20desired%20shapes%20and%20move%20onto%20cookie%20sheet.%20Use%20a%20smaller%20cookie%20cutter%20to%20cut%20out%20the%20second%20of%20every%20other%20cookie%20(these%20tiny%20cookies%20are%20great%20for%20baking%20and%20munching%20%E2%80%93%20and%20they%E2%80%99re%20so%20cute!).%20Re-roll%20scraps%20as%20necessary,%20putting%20back%20into%20fridge%20to%20harden%20up%20if%20the%20dough%20gets%20too%20soft.%20Bake%20for%2011-12%20minutes,%20until%20the%20cookies%20are%20just%20slightly%20brown%20on%20the%20edges.%3C/p%3E%3Cp%3ERoll,%20roll,%20cut,%20cut,%20cut%20and%20bake,%20bake,%20bake!%3C/p%3E%3Cp%3ETo%20finish,%20dust%20with%20confectioners%20sugar%20and%20fill%20with%20a%20thin%20layer%20of%20jam.%3C/p%3E%3Cp%3EFreed%20of%20gluten%20from%20a%20recipe%20by%20the%20Joy%20of%20Baking%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
