Oatmeal Jumble Bars
Use this fruit filling to make these yummy bars Rhubarb Cranberry Apricot Fruit Filling.
Oatmeal Jumble Bars
- 3 c. Rhubarb Cranberry Apricot fruit filling
- 1 1/2 c. all-purpose flour
- 1 1/2 c.rolled oats
- 1 c. packed brown sugar
- 1/4 t.baking soda
- 1/4 t salt
- 1/2 t. cinnamon
- 1 c. shortening (crisco)
- 1 t. lemon zest, fresh grated
- 1/2 c. chopped walnuts or pecans
Lightly grease 13x9 baking pan. Preheat oven to 375.
In a medium bowl, combine the flour, rolled oats, packed brown sugar, baking soda, salt and cinnamon. Using a pastry blender or 2 knives, cut in shortening until mixture resembles coarse crumbs. Stir in lemon zest and chopped nuts. Reserve 1 cup of crumb mixture for topping.
Press remaining mixture into the bottom of prepared baking pan. Evenly spread fruit filling on top. Sprinkle with reserved crumb mixture. Bake at 375 30-35 mins. or until top is golden brown and filling is bubbly. Cool in pan on wire rack.
Serve with Vanilla Ice Cream~
Note: if using filling from freezer, defrost in the refrigerator over night and warm in microwave on low before spreading in pan.
