Ingredientes

  • 1 1/2 c. Black beans
  • 2 x Plum tomatoes cut into 1/4"
  •     Zest of one lime finely gra
  • 3 Tbsp. Fresh lime juice minced
  • 1/2 tsp Unsweetened cocoa pwdr
  • 1 pch Cinnamon
  • 1 x Avocado pitted and peeled
  • 30 sm Tortilla chips peppers shredded
  •     lg Garlic clove, chopped dice ted
  • 3 Tbsp. Fresh cilantro leaves
  • 2 dsh Tabasco sauce
  • 1/2 tsp Grnd cumin
  •     Salt and pepper to taste
  • 1 Tbsp. Nonfat lowfat sour cream
  • 3/4 c. Monterey jack cheese with
  • 3 x Romaine lettuce leaves

Direcciones

  1. Place the beans in a bowl and coarsely mash with the back of a wooden spoon. Add in the garlic, tomatoes, lime zest, 2 Tbsp. of the lime juice, 1 Tbsp. of the cilantro, tabasco sauce, cocoa pwdr, cumin, cinnamon, salt and pepper. Mix all ingredients together well.
  2. In another bowl, mash the avocado with the remaining 1 Tbsp. lime juice, lowfat sour cream and salt to taste.
  3. Spread 1 Tbsp. of the bean mix on each of the tortilla chips. Top each with 1/4 tsp. of the avocado mix, the a sprinkling of grated cheese and the shredded lettuce. Sprinkle the remaining 2 Tbsp. of cilantro over all.
