Ingredientes

  • 1 bn green onions chopped
  • 1 bn cilantro chopped
  • 1/4 c. minced ginger root
  • 1/4 c. chopped garlic
  • 1 c. lemon juice
  • 1 c. rice wine vinegar
  • 3/4 c. soy sauce
  • 1/4 c. sugar
  • 1 tsp Sichuan peppercorns
  • 1 tsp red pepper flakes
  • 1 tsp freshly-grnd black pepper
  •     Coarse salt to taste
  • 1/4 c. black sesame seeds
  • 1/4 c. white sesame seeds
  • 6 x thick center-cut ahi tuna steaks - (6 to 8 ounce ea

Direcciones

  1. For the Asian Vinaigrette: Combine onions, cilantro, ginger, garlic, lemon juice, vinegar, soy sauce, sugar, peppercorns, red pepper flakes, pepper and salt to taste in bowl. Refrigerateovernight before using. (Makes 3 c.)
  2. For the Tuna: Combine black and white sesame seeds. Roll tuna steaks in seeds. Heat a large skillet over high heat. When a drop of water pops out of pan, add in tuna and sear on each side 2 to 3 min. Remove to paper towels, then thinly slice each steak.
  3. To serve, ladle 1/4 c. Asian Vinaigrette onto each of 6 plates. Top with fan of tuna slices. Repeat with other steaks.
  4. This recipe yields 6 servings.
