Ingredientes

  • 2 ounce Octopus, cooked and sliced
  • 3 piece large scallops,cooked and sliced in half round
  • 1 c. Mixed salad greens, seasonal
  • 2 Tbsp. Mustard vinaigrette
  • 4 sprg fresh chives
  •     Cayenne pepper
  • 1/2 c. Salad oil
  • 1/4 c. Cider vinegar
  • 1 x Egg yolk
  • 2 Tbsp. Mustard
  • 1 ounce Warm water
  • 1/2 ounce Lemon juice
  •     Tabasco sauce
  •     Salt, to taste

Direcciones

  1. Mustard Vinaigrette: Whip all ingredients together, except salad oil.
  2. Slowly add in salad oil till dressing is of a creamy texture, adjust seasoning.
  3. Arrange salad leaves, sliced octopus and scallops on platter.
  4. Dress seafood lightly with mustard dressing. Sprinkle cayenne pepper over salad and garnish with fresh chives.
