%20ago,%20I%20wrote%20a%20little%20blog%20post%20about%20neck%20bones%20and%20gravy.%3C/p%3E%3Cp%3EWho%20would%20have%20guessed%20what%20a%20stir%20it%20would%20cause!!%20As%20it%20turns%20out,%20more%20than%20a%20few%20people%20I%20know%20have%20a%20strong%20opinion%20on%20the%20subject.%20There%20are%20a%20couple%20of%20my%20friends%20who%20couldn%E2%80%99t%20fathom%20the%20concept%20at%20all%20(and%20the%20idea%20of%20eating%20something%E2%80%99s%20neck%20pretty%20well%20grossed%20them%20out).There%E2%80%99s%20my%20Italian%20buddy,%20Mikey,%20who%20grew%20up%20eating%20them%20with%20cabbage%20instead%20of%20gravy...sometimes.%20There%E2%80%99s%20my%20southern%20friend,%20Whit,%20who%20had%20a%20similar%20experience%20and%20couldn%E2%80%99t%20imagine%20them%20being%20served%20with%20gravy,%20or%20pasta.%20And,%20along%20with%20Whit,%20there%20is%20her%20dad,%20(whom%20I%20will%20call%20%E2%80%9CPapa%20Joy%E2%80%9D%20-%20just%20because%20I%20think%20it%E2%80%99s%20fun)%20who%20was%20so%20enthralled%20with%20the%20idea%20of%20neck%20bones%20being%20served%20in%20this%20way%20that%20(from%20what%20I%20hear)%20he%20had%20a%20bevy%20of%20his%20co-workers%20gawking%20at%20my%20blog%20post%20in%20sheer%20wonder.%3C/p%3E%3Cp%3EPapa%20Joy%20%E2%80%93%20this%20one%E2%80%99s%20for%20you.%3C/p%3E%3Cp%3EAnd%20so,%20I%20vowed%20then%20and%20there,%20that%20the%20next%20time%20I%20could%20get%20my%20hands%20on%20some%20neck%20bones,%20there%20would%20be%20a%20throw%20down%20in%20my%20kitchen.%20Last%20week,%20while%20browsing%20the%20meat%20counter%20at%20my%20local%20grocer,%20I%20was%20delighted%20to%20see%20a%20large%20supply%20of%20gorgeous,%20meaty%20neck%20bones%20on%20display%20for%20a%20mere%2069%20cents%20a%20pound.%20You%20all%20know%20how%20cheap%20I%20am,%20so%20that%20made%20me%20plenty%20happy.%20I%20promptly%20scooped%20up%20four%20packages%20(about%2014%20pounds%20worth)%20and%20made%20my%20way%20home%20with%20my%20treasures.%3C/p%3E%3Cp%3EThat%20was%20the%20beginning.%20From%20there,%20I%20enlisted%20a%20few%20of%20our%20friends%20to%20come%20judge%20the%20resulting%20Smorgasbord%20of%20pork%20and%20all%20the%20little%20tidbits%20I%20set%20out%20with%20it.%3C/p%3E%3Cp%3EI%20had%20Whit%20call%20home%20for%20her%20daddy%E2%80%99s%20recipe.%20I%20made%20a%20trip%20to%20St%20Louis%E2%80%99%20Little%20Italy%20(aka,%20The%20Hill)%20for%20gorgeous%20olives,%20prosciutto%20di%20Parma,%20fresh%20parmesan%20cheese,%20some%20good%20wine,%20and%20a%20treasure%20trove%20of%20other%20delights.%3C/p%3E%3Cp%3EAt%20about%20noon%20on%20Sunday,%20I%20began.%20Two%20trays%20of%20neck%20bones%20in%20front%20of%20me,%20they%20both%20began%20the%20same,%20seasoned%20with%20salt%20and%20pepper.%20The%20Southern%20Style%20bones%20also%20got%20some%20garlic%20powder%20and%20red%20pepper%20flake.%20Both%20batches%20were%20caramelized%20separately.%20The%20Italian%20bones%20were%20then%20removed%20and%20I%20saut%C3%A9ed%20onion,%20garlic%20and%20basil%20in%20the%20same%20pan,%20then%20deglazed%20with%20some%20Pinot%20Noir,%20tossed%20the%20bones%20back%20in%20and%20covered%20with%20crushed%20tomatoes,%20then%20set%20to%20simmer.%3C/p%3E%3Cp%3EThe%20Southern%20bones%20were%20covered%20in%20water%20seasoned%20with%20more%20salt,%20pepper,%20garlic%20and%20red%20pepper%20(disclaimer%20%E2%80%93%20I%20took%20a%20little%20creative%20license%20with%20Papa%20Joy%E2%80%99s%20recipe,%20but%20considering%20his%20daughter%E2%80%99s%20response%20to%20them,%20I%20don%E2%80%99t%20think%20he%E2%80%99ll%20mind.)%20On%20the%20same%20note,%20based%20on%20everything%20I%E2%80%99ve%20heard%20about%20him%20from%20Whit,%20I%20figured%20a%20little%20%E2%80%9Cgrease%E2%80%9D%20was%20in%20order,%20so%20I%20dipped%20into%20my%20supply%20of%20bacon%20fat%20for%20both%20the%20browning%20and%20the%20water.%20Later,%20when%20I%20told%20Whit%20about%20it,%20she%20said%20nonchalantly%20%E2%80%9Cwell,%20yeah,%20that%20kind%20of%20goes%20without%20saying%E2%80%9D,%20so%20apparently%20I%20was%20on%20the%20right%20track.%20And%20being%20on%20the%20%E2%80%9Cright%20track%E2%80%9D%20was%20sheer%20luck,%20since%20my%20instructions%20consisted%20of%20%E2%80%9CSeason%20the%20water%20with%20salt,%20pepper%20and%20red%20pepper%20flake%20until%20it%20tastes%20like%20its%20right%E2%80%9D.%20Since%20I%20had%20absolutely%20no%20experience%20with%20this,%20it%20was%20a%20crap%20shoot.%3C/p%3E%3Cp%3EBoth%20pots%20then%20go%20on%20to%20simmer%20until%20the%20meat%20starts%20to%20fall%20off%20the%20bone,%20which%20in%20this%20case%20was%20about%20three%20hours.%3C/p%3E%3Cp%3ENear%20the%20end%20of%20the%20cooking%20process,%20I%20boiled%20some%20bucatini%20pasta%20for%20my%20Italian%20Bones,%3C/p%3E%3Cp%3Eand%20cooked%20some%20thick%20slices%20of%20cabbage%20in%20water%20(seasoned%20just%20like%20the%20water%20for%20the%20neck%20bones)%20to%20serve%20alongside%20the%20Southern%20bones.When%20Whit%20arrived,%20it%20looked%20like%20the%20scene%20of%20a%20catering%20job%20gone%20bad.%20The%20kitchen%20was%20a%20riot%20of%20smells,%20flavors,%20and....well....stains.%20The%20gravy%20was%20all%20over%20the%20place%20(my%20new%20stove%20only%20has%20one%20%E2%80%9Csimmer%E2%80%9D%20burner,%20and%20the%20others%20just%20won%E2%80%99t%20stay%20low%20enough%20to%20keep%20sauces%20from%20boiling).%20However,%20the%20moment%20of%20truth%20arrived%20and%20her%20eyes%20lit%20up%20as%20she%20smelled%20the%20simmering%20bones.%3C/p%3E%3Cp%3E%E2%80%9COh%20man,%20I%20think%20you%20got%20it!%E2%80%9D%20she%20said.(I%20may%20not%20have%20mentioned%20it%20before,%20but%20my%20dining%20room%20is%20%22Hershey%20Bar%22%20brown,%20walls%20and%20ceiling,%20so%20getting%20decent%20photos%20in%20there%20isn't%20easy.%20Its%20like%20being%20in%20a%20constant%20state%20of%20%22mood%20lighting%22.%20That's%20my%20way%20of%20apologizing%20for%20the%20poor%20quality%20of%20these%20shots.)%3C/p%3E%3Cp%3EThat%20was%20all%20the%20encouragement%20I%20needed.%20I%20summoned%20the%20other%20judges%20(Mikey,%20JoJo,%20Feather,%20and%20the%20hubs)%20to%20the%20dining%20room%20and%20we%20tore%20into%20that%20buffet%20like%20we%20didn%E2%80%99t%20know%20where%20our%20next%20meal%20was%20coming%20from.%3C/p%3E%3Cp%3EA%20whole%20roll%20of%20paper%20towels%20(and%20a%20fair%20amount%20of%20noises%20that%20would%20have%20been%20considered%20obscene%20under%20other%20circumstances)%20later,%20and%20none%20of%20us%20could%20decide%20which%20version%20we%20liked%20better.%20The%20devastation%20that%20was%20left%20at%20the%20end%20of%20the%20night%20made%20it%20look%20like%20there%20had%20been%20a%20war%20between%20an%20angry%20Italian%20woman%20and%20her%20kitchen.%20Oh...wait%20a%20minute.....that%20actually%20happened!%3C/p%3E%3Cp%3EI%20wish%20I%20had%20been%20able%20to%20move%20afterward%20so%20that%20I%20could%20present%20you%20with%20the%20image%20of%20my%20kitchen%20table%20that%20will%20haunt%20me%20for%20the%20rest%20of%20my%20days%20(or,%20at%20least,%20until%20the%20next%20dinner%20party%20I%20host).%3C/p%3E%3Cp%3EAnd%20so,%20in%20the%20end,%20the%20jury%20is%20still%20hung%20on%20which%20version%20is%20better.%20My%20personal%20opinion?%20Just%20serve%20both!%3C/p%3E%3Cp%3ESpecial%20thanks%20to%20Whit%E2%80%99s%20dad%20(also%20known%20as%20Papa%20Joy)%20both%20for%20the%20recipe,%20and%20for%20putting%20up%20with%20me%20calling%20him%20%E2%80%9CPapa%20Joy%E2%80%9D%20throughout%20this%20post.%20I%20hope%20you%20enjoyed%20my%20rendition%20of%20one%20of%20your%20old%20favorites!%20(oh,%20and%20thanks%20for%20loaning%20us%20your%20girl...she%E2%80%99s%20a%20keeper!)%3C/p%3E){kind=link}
